Mai mettere il sale per montare gli albumi, li rende meno stabili e rilasceranno più liquido una volta montati. Al contrario, con un acido (limone o aceto), il composto risulterà più stabile e liscio e non si smonterà in fretta (il sale prima aiuta le proteine a formare la schiuma, ma poi le inibisce e le fa collassare. Gli acidi svolgono la stessa funzione di facilitatori ma non impattano sulla struttura)

Io uso la ricetta dello chef marchesi: i tuorli e lo zucchero li mescolo con il cucchiaio di legno, fino a quando lo zucchero non si scioglie (dai 20 ai 30 minuti xD). Poi, MAI mescolare così gli albumi, bisogna mischiarli con un movimento rotatorio “dal basso verso l’alto”, così non si smontano, rendendo la crema più spumosa e voluminosa. Prova a seguire questi consigli: vedrai che sarà più buono! (Ah, parti da uno strato di savoiardi o pavesini, verrà più belo esteticamente!)

Thank you so much for helping me bring Italian culture to my students. They mostly are immigrants from El Salvador who have come to the US for a better life--and have so little. They love that they can understand the Italian language (because it's so close to Spanish), and enjoy learning the cultural differences and the beauty of Italy. In Canada si trovano i pavesini? Prova.....il tiramisù viene ancora più su 👆 😉😉😉😉😀😀
Sei bravo, però un consiglio... quando prepari una massa di uova e zucchero se dividi i tuorli dagli albumi prima monta i tuorli con 2 terzi dello zucchero fino a che non siano bianchi e spumosi (in questo caso poi incorpori il mascarpone), dopo di che inizi a montare le chiare con 1 terzo dello zucchero restante appunto a neve ferma. Unisci con movimenti delicati le chiare a neve ferma con una spatola dall'alto verso il basso, questo serve a non smontare la crema, che infatti a te è venuta troppo liquida e non spumosa come dovrebbe essere essere.
Per il resto ''de gustibus'' si dice... XD ciao e alla prossima

Love your videos. Totally hate tiramisu. Seriously, I just returned from Italy and found it on almost all menus. Is that for tourists, or do Italians in most regions really like it? You are correct that it's largely Florentine in origin but now it's everywhere from the Veneto to the south. Why so much zuppa inglese and other soft creamy desserts? Italians are brilliant pastry chefs, so I'm confused.
Tiramisù is only from Veneto and Friuli Venezia Giulia ( most from Friuli) and it doesn't have florentine's origins

I know other story which tells that a potential customer from a brothel was having some issues with his peepee and one of the girls who worked there, went to the kitchen to cheer him up. Put everything what she’s got together and gave it to him, and suddenly he was up in all senses again

yes, providing eggs are fresh.
The most "dangerous" part is the mascarpone. In some really rare cases it can develop the botox toxine, when not stored or prepared correctly.

My gf did this last week but she put a very tiny layer of Nutella between two biscuits, so two biscuits together like a sandwich and a little bit of Nutella in between. DELICIOUS 👌

Bravo Marco! I sometimes replace mascarpone with either ricotta cheese or plain yogurt (especially if I'm on a diet 😆😅). Well done :)

And do you add the eggs like in a normal mascarpone cream? this is very interesting. I live in Kenya and mascarpone is not always available and it costs like gold.
michela consiglio Well, I know eggs make tiramisu a lot tastier and are useful for binding all ingredients together which make up the "cream", but to be honest I try to avoid using raw eggs when preparing food at home, unless I am sure of their provenance (I know and trust the supplier, etc.) It's not unheard of that you may get salmonella from uncooked eggs, so I try to avoid them. Egg-free tiramisu is a bit less creamy and tasty, but I like it all the same. Of course, one could avoid the risk and pasteurise the egg(s) before adding them to the tiramisù, but I have no idea how to go about it at home (basically I don't know what the technique for pasteurising eggs at home is), whereas I'm pretty sure professionally-made tiramisù (by pastry chefs, or industrially-made) is produced using pasteurised eggs

Io di norma usavo il caffè espresso mooolto lungo :-) comunque nella ricetta tradizionale va anche un cucchiaino di liquore ( in genere dolce ma va bene anche in altro tipo) :-) comunque come sempre complimenti

I worked at a restaurant as a pastry chef for a couple years and this was my favorite dessert to make. We used a coffee concentrate, which I hated, even though we had both an espresso machine and a setup for Turkish coffee.

Uh, con la grappa non l'ho mai sentito. Ma ci sono molte varianti alcoliche...quindi forse anche con grappa ;-)
La grappa aggiunta nella crema fa sì che duri più giorni! (Anche se di solito non ce ne è bisogno, finisce subito) :-)
Marcooooo!! Il caffè non si zucchera e il mascarpone va freddo altrimenti smonta!!
Poi io uso i pavesini, ma anche con i savoiardi è buono (e la ricetta originale li prevede infatti).
Per l’origine mi ricordo di aver letto che pochi mesi fa c’è stata una sentenza che attribuiva l’origine del tiramisù ad una città friulana invece che ad una veneta, quindi immagino sia originario di quelle parti ☺️

Matteo Gardinazzi Veramente io il tiramisù con i pavesini non l’ho mai sentito ! La tua dovrà essere una ricetta “strettamente famigliare” . 😉
Aris1956 c’era un altro commento che lo diceva e un altro che diceva di considerare eresia chi utilizzava i pavesini al posto dei savoiardi, per cui forse non proprio così ristretta la cosa è (mi è partito Yoda qua).
Sarà che a casa mia i savoiardi si sono sempre utilizzati per fare a zuppa inglese, magari era per non fare due dolci con la stessa base di biscotti!
Anche io lo faccio come Matteo. Niente zucchero nel caffè e poco anche x le uova, secondo me il mascarpone è già dolce di natura che non serve tanto zucchero. Per dirti, a capodanno ne ho fatte 2 teglie x una festa e su 6 uova usate ho usato circa 100 grammi di zucchero, ma è sicuramente gusto personale, a me piace sentire bene il contrasto tra caffè e crema. Poi i pavesini si usano tanto anche nelle mie zone in Italia (Veneto) ma a Hong Kong dove vivo non ci sono, quindi lo faccio sempre e solo con i savoiardi.
Io faccio anche la versione tropicale senza caffè e cioccolato, sostituiti con l'ananas e cocco. La crema di mascarpone uguale, poi uso l'ananas in lattina, lo sciroppo viene usato x ammorbidire i biscotti e poi negli strati metto savoiardi (o pavesini) + ananas sciroppato tagliato a pezzetti ( puoi mettere fette ma trovo che a pezzetti van meglio x dopo quando lo servi) + cocco grattugiato che ricopra l'ananas + crema di mascarpone.
Finisci con copertura di cocco come useresti il cioccolato. Magnar e morir 😂😂
