      You can use date syrup or carob syrup I moved to Tunisia from USA last January and we don't have brown sugar here a neighbor gave us carob syrup it works well 1 teaspoon per cup of sugar for light brown sugar 2 teaspoons for dark brown sugar

      Yes molasses is very thick because it has been cooked down. Best to read the labels of the molasses to check. But it should just be molasses as it is

    Gemma,
    How long will this keep on the shelf? Can it be canned?

    • @biggerbolderbaking
      @biggerbolderbaking  5 лет назад

      It will last 3-4 months in an airtight container at room temperature. I reckon it will last longer when canned, but I am not so sure about how to go about that.

    In Portuguese cuisine they have different names for the specific states of sugar. I think that this would be the tear point after the string point.

      Chicken and egg! I don't see why not! You might be caught in a pickle sometime and do this 😉

    hi, what is the substitute if i only have light brown sugar? and how many days it can stand in the freezer or refrigerator?

    • @biggerbolderbaking
      @biggerbolderbaking  3 года назад

      You can use light brown sugar but the result will be lighter in color and taste.
      Well sealed jars of molasses should be stored in a cool, dry, dark location and will last for up to one year. NO need to freeze or refrigerate it.

    Hi Gemma...i have a question...can i use cream of tartar while making caramel also? Coz molasses i use store bought but caramel i prefer homemade...only when i make lesser quantity it turns out smooth but as i try to make a larger batch it gets crystallised. Pls suggest.
