my friends used to go DeER hUntiNG and turned the meat into jerky. He would come to class with almost a pound, and charge people about $3 per handful. Youd still get more (about 9 pieces) for his sale of $3. I honor him to this day. I will say, I watched my parents run a little side business making jerky and it's more pricey to produce than you might imagine, especially if meat prices are out of control like during the pandemic. If you're going store bought though, at least get it at some place like Costco where it's much more reasonably portioned to the bag price, especially for the non-beef varieties.
I'm grossed out how much plastic waste comes from some of these food product. At least the jerky pieces are not individually wrapped. Some ready made salads are the worst. Plastic wrapped shit and you get nothing. You basically pay for plastic.
I always found the difference between meat and jerky prices to be astronomically high. You get something like 2x-4x the jerky per money if you make it yourself and it tastes better too. Associated costs don't seem make up for this difference. But I also mostly do my shopping for meats at the cheapest prices possible like Costco by default and never considered the more pricy options that some people are forced with. Red meats have gone up in price by crazy amounts. So I've been out of the jerky game for a few years now partially due to that.
A large part of meat’s weight comes from water/hydration in the meat. So jerky makers buy the meat at market price by weight, then immediately remove a large portion of the weight that they paid for by drying it. So the makers have to charge seemingly higher prices to make up for the money lost by dehydration. Add to that, good quality jerky is not a quick and easy process. I’m stilled bummed by the price of jerky, but I definitely understand it.
I’ve been saying this about jerky since I was a teenager in 2010… so to hear someone say ‘your exposing big jerky right now’ In 2022 Kinda blows my mind … they charge that much because people PAY that much. If people realized they were getting ripped off they’d stop buying & jerky companies would be forced to make a change either in price or quantity you get in each bag or both. We, the consumers, create the companies & corporations that surround us. And we, the consumers, do not consume intelligently.

When it was fresh it was so soft and went down so easy, when it cooled it was thin little chewy slices of heaven, she used way too much seasoning for a normal person but it was the best damn jerky ever! What shocked me later in the jerky game was discovering how much sugar is in mainstream jerky. Even plain and spicy flavors. It’s like cutting cocaine with cheap stuff that people think tastes good.
It's not really a scam, so much as it is a premium priced product that few people really want to make...even though its easy. You don't need a dehydrator or any special tools. Just an oven on about 200F, a baking pan, some dollar store baking racks, the cheapest cut of non-fatty beef, and a bottle of teriyaki sauce. Cut the meat really thin, soak it in the sauce for 30 minutes, arrange it on the racks, and stick it in the oven for 2-4 hours to dry out. By the time you do this, you will 1) think its a great bargain, or 2) you'll realize that a large part of the price is the "hassle factor" of making it.

You could sell higher moisture jerky like slim jim with relatively low loss in weight to flavour value or sell low moisture jerky with a longer shelf life and higher flavour value at a higher cost due to its lighter weight. Jerky is a balancing act and it's significantly more difficult than a smoked meat. Anyone who portrays jerky as a smoked meat is a fool. It's a dried meat and smoking is a different beast altogether.

I know this is 4 months old, but to be a bit fair a lot of companies have done that. Kept the price the same, but slowly over time shrunken the amount given little by little. Lot of snack cakes and other snacks in general have done that. While I don't know for certain if it has been that way with jerky I would be surprised if it hadn't been that way.

As someone who makes beef jerky, the primary cost comes from running the machines to dehydrate the jerky. The costs of the raw ingredients might be cheap, but its the electricity that comes along with it. I run my machines for 8-9 hours at a time. Most Normal jerky takes about 5-6.
Price is accurate just think of the cost of raw beef, but the crime here is the excessive amount of plastic packaging each package could be a 4th the size and still fit the meat

It's called brand name pricing. You're essentially paying more so for the name of the package rather than what's in the package - because the brand name is basically acting like a guarantee that you'll get a quality product you know is good from past experience, and from a company you recognize. There's two types of "brand name pricing" that take their labels from the stock market world; "Bull Brands", and "Bear Brands". Bull Brands are brands associated with a product that is high in quality, but expensive. It's when a company spends decades building up a reputation of having a good product, and eventually realize they've built up their reputation of their product to the point where they can start selling less for more, because of the name on the package. Take Jack Links for example - they've well known for having extremely good beef jerkey, and no one is *not* going to know who Jack Links is outside of the U.S. Bear Brands are brands associated with a product that moderate/mediocre, but can be purchased cheaply. Of course, brand name pricing isn't just a run way street, it can work either way... for example companies who've spent years building up reputations of being people who you know you can buy product in bulk for cheap from. For them they're not necessarily aiming for making a four/five start product, they're just trying to create something either between passable or good that they can sell to you in large quantities for basically nothing. Brand name pricing is a big and well know thing in marketing, and it's not like it's just some kind of phenomena unique to the U.S. either. You can go to Europe, where you'll also find well known brands selling their products for ludicrous amounts of money. Hell, ask any Brit.
It really is a scam.. If you have an oven, you can make your own jerky. Slice meat thin, marinade, lay on trays evenly, cook for 4-5 hours at 85C(175F).

Jerky prices are adjusted to meet the market price per pound BEFORE drying. After losing all water weight, jerky companies are charging the adjusted net weight before desiccation.

I have used my clone grow cabinet to dehydrate foods before, including jerky. I crank up the exhaust fan and interior circulating fans. If I need some heat, I will turn on my LED light, but most of the time I don’t need to. Buy some meat on manager’s special (cheap sale on meat about to expire), marinate it, then dehydrate it. You can make a ton of jerky for dirt cheap, as well as dehydrated banana and apple chips, raisins, craisins, etc.
Considering a 1lb of beef strips is about $8, then you have to season it, dry it, cure it etc. Its kinda close to correct value. Maybe they could be $5 instead of 7, but it tastes so good a lot of people dont care. Also, the bigger the bag of jerky, the more value. A $15 bag would have like 3 or 4 times more than the $7 bag. I get the $15 all the time and I cant even finish it before my jaw locks up lol

It's so expensive because even cheap meat is kind of expensive and it has a high liquid content, so you have to start with a much larger piece of meat than what those "full" sized jerky pieces end up as. Jerky is kind of a niche product and price scales heavily for a product based upon the amount that is produced, IE if I made jerky in my backyard it would cost me way more per piece than if I had a massive factory the size of the death star churning out entire cows into delicious dried sticks of meat. Plus there's all of the normal expenses a business has, overhead, packaging, shipping etc etc. Jerky is a little overpriced, but it isn't as overpriced as you think.

A pound of cheap top round steak is $6.50. It will dehydrate to about 4ounces. If you pay $6 for 2.85 ounces of jerky, including cost for shipping, production, and packaging you aren't looking at a huge markup.

The last time I ever bought jerky was about 3 years ago when I literally spent $20 on a bag and only received about 8 or 9 peices and some scraps. My disappointment was immeasurable, and my day was ruined.
Because of the necessary low fat and moisture content, jerky is high in protein. A 30 g (about 1 oz) portion of lean meat, for example, contains about 7 g of protein. By removing 15 g of water from the meat, the protein ratio is doubled to nearly 15 g of protein per 30 g portion. In some low moisture varieties, a 30 g serving will contain 21 g of protein, and only one g of fat. The price per unit weight of this type of jerky is higher than less-dried forms, as it takes 90 g of 99% lean meat to generate 30 g of jerky.
This is why beef jerky is so expensive and it is actually a very simple explanation. Companies buy fresh meat, add spices and dries it. For 1kg of fresh meat, they may only get 300g of beef jerky at the end of the process. Adding to this pure loss of weight (and money), you have to add spices cost, salaries, various maintenance and running costs. You can also add the drying process cost because while it is stored to dry, it is not selling. All of these factors adding up makes the final product price much higher than the price of fresh meat.

Not to mention the prep time. A good jerky marinades for over 24 hours and to make the jerky softer they have to do some kind of black magic. Its not easy stuff to make at that level. Making it yourself is good but no where near as good.
You see I would agree with you but what I've noticed is the locally made better quality jerky that has way more in each pack is only like a dollar more and sometimes about the exact same price as Jack Link's for example. So they're clearly charging too much even with the meat prep and production cost. At least for the name brands. I can accept that it's a more pricey snack but realistically I think they could at least knock a dollar off of the price and still be really profitable.
I buy Sugar River. They sell the scraps from these companies at a reasonable price. Recently, I purchased 2.5 POUNDS of spicy snack stick ends at Ollie's for $5, courtesy of Sugar River. I looked them up, and apparently, they get their stuff from Jack Links. So, hell yeah, I'll buy that. However, when it comes to the 'premium' brands, I steer clear.

as a Meat Cutter I can promise you they are all bottom round steak slices, AKA the 2nd cheapest ""steak"" you can buy, just make your own, get a roast have it sliced, buy the marinade, make your own for 5x the savings.

I remember going on roadtrips and me and my cousin eating sooo much beef jerky over the entire trip. Only had that one bag and there was still jerky in there when we got home. Beef dehydrates and weighs much less once “jerked”, as a result they probably are trying to get a higher return in prices due to this. That being said, for those who love jerky, try making your own. You can make it taste however you want and you can use an oven. Smoking is also something that is labor intensive and time consuming depending on your amounts (used to make deer jerky with apple wood) but also highly worth it. For those of you who love jack links jerky, Sam’s club will put it on sale for 12.99 for an entire pound. That requires a subscription, however.
Tbh when you're drying/smoking meat you lose 50-75% of the weight of the meat you're starting with, so for every pound of jerky, they're probably using 3-4 pounds of raw meat. Add costs for seasoning, actual time/electricity needed for smoking the meat, packaging, storage, marketing, shipping and you get to the 5$. Not saying it's great, but it's the same with many dried products - dried mushrooms are 3-4 times more expensive that fresh ones for the same reason, you lose that water-weight when drying them out, but you still gotta charge the consumer for the weight of the original mushrooms, otherwise it doesn't make sense to dry them before selling.
As someone who makes their own jerky, you won't believe the amount of shrinkage that the meat undergoes during the process. A few pound roast that could feed a family will be reduced to a pile of jerky the size of a large burger. Its expensive enough to make that I only do it when I can get beef for cheap.

I will say, I watched my parents run a little side business making jerky and it's more pricey to produce than you might imagine, especially if meat prices are out of control like during the pandemic. If you're going store bought though, at least get it at some place like Costco where it's much more reasonably portioned to the bag price, especially for the non-beef varieties.
I'm grossed out how much plastic waste comes from some of these food product. At least the jerky pieces are not individually wrapped. Some ready made salads are the worst. Plastic wrapped shit and you get nothing. You basically pay for plastic.

I always found the difference between meat and jerky prices to be astronomically high. You get something like 2x-4x the jerky per money if you make it yourself and it tastes better too. Associated costs don't seem make up for this difference. But I also mostly do my shopping for meats at the cheapest prices possible like Costco by default and never considered the more pricy options that some people are forced with.
Red meats have gone up in price by crazy amounts. So I've been out of the jerky game for a few years now partially due to that.
A large part of meat’s weight comes from water/hydration in the meat. So jerky makers buy the meat at market price by weight, then immediately remove a large portion of the weight that they paid for by drying it. So the makers have to charge seemingly higher prices to make up for the money lost by dehydration. Add to that, good quality jerky is not a quick and easy process.
I’m stilled bummed by the price of jerky, but I definitely understand it.

When it was fresh it was so soft and went down so easy, when it cooled it was thin little chewy slices of heaven, she used way too much seasoning for a normal person but it was the best damn jerky ever! What shocked me later in the jerky game was discovering how much sugar is in mainstream jerky. Even plain and spicy flavors. It’s like cutting cocaine with cheap stuff that people think tastes good.

It's not really a scam, so much as it is a premium priced product that few people really want to make...even though its easy. You don't need a dehydrator or any special tools. Just an oven on about 200F, a baking pan, some dollar store baking racks, the cheapest cut of non-fatty beef, and a bottle of teriyaki sauce. Cut the meat really thin, soak it in the sauce for 30 minutes, arrange it on the racks, and stick it in the oven for 2-4 hours to dry out. By the time you do this, you will 1) think its a great bargain, or 2) you'll realize that a large part of the price is the "hassle factor" of making it.

You could sell higher moisture jerky like slim jim with relatively low loss in weight to flavour value or sell low moisture jerky with a longer shelf life and higher flavour value at a higher cost due to its lighter weight. Jerky is a balancing act and it's significantly more difficult than a smoked meat. Anyone who portrays jerky as a smoked meat is a fool. It's a dried meat and smoking is a different beast altogether.

I know this is 4 months old, but to be a bit fair a lot of companies have done that. Kept the price the same, but slowly over time shrunken the amount given little by little. Lot of snack cakes and other snacks in general have done that. While I don't know for certain if it has been that way with jerky I would be surprised if it hadn't been that way.

As someone who makes beef jerky, the primary cost comes from running the machines to dehydrate the jerky. The costs of the raw ingredients might be cheap, but its the electricity that comes along with it. I run my machines for 8-9 hours at a time. Most Normal jerky takes about 5-6.

I remember making jerky at home with my stepmom with a food dehydrator and for like 20$ in ingredients we would make like 6 of the massive ziplock bags nearly overflowing, there was jerky for months any time we made it. Jerky has a longer shelf life and all you really do is season meat and let it dry out, not exactly a lot of work, so where is all this price coming from?
It's called brand name pricing. You're essentially paying more so for the name of the package rather than what's in the package - because the brand name is basically acting like a guarantee that you'll get a quality product you know is good from past experience, and from a company you recognize. There's two types of "brand name pricing" that take their labels from the stock market world; "Bull Brands", and "Bear Brands".
Bull Brands are brands associated with a product that is high in quality, but expensive.
It's when a company spends decades building up a reputation of having a good product, and eventually realize they've built up their reputation of their product to the point where they can start selling less for more, because of the name on the package. Take Jack Links for example - they've well known for having extremely good beef jerkey, and no one is *not* going to know who Jack Links is outside of the U.S.
Bear Brands are brands associated with a product that moderate/mediocre, but can be purchased cheaply.
Of course, brand name pricing isn't just a run way street, it can work either way... for example companies who've spent years building up reputations of being people who you know you can buy product in bulk for cheap from. For them they're not necessarily aiming for making a four/five start product, they're just trying to create something either between passable or good that they can sell to you in large quantities for basically nothing.
Brand name pricing is a big and well know thing in marketing, and it's not like it's just some kind of phenomena unique to the U.S. either. You can go to Europe, where you'll also find well known brands selling their products for ludicrous amounts of money. Hell, ask any Brit.

I have used my clone grow cabinet to dehydrate foods before, including jerky. I crank up the exhaust fan and interior circulating fans. If I need some heat, I will turn on my LED light, but most of the time I don’t need to. Buy some meat on manager’s special (cheap sale on meat about to expire), marinate it, then dehydrate it. You can make a ton of jerky for dirt cheap, as well as dehydrated banana and apple chips, raisins, craisins, etc.
Considering a 1lb of beef strips is about $8, then you have to season it, dry it, cure it etc. Its kinda close to correct value. Maybe they could be $5 instead of 7, but it tastes so good a lot of people dont care.
Also, the bigger the bag of jerky, the more value. A $15 bag would have like 3 or 4 times more than the $7 bag. I get the $15 all the time and I cant even finish it before my jaw locks up lol

It's so expensive because even cheap meat is kind of expensive and it has a high liquid content, so you have to start with a much larger piece of meat than what those "full" sized jerky pieces end up as. Jerky is kind of a niche product and price scales heavily for a product based upon the amount that is produced, IE if I made jerky in my backyard it would cost me way more per piece than if I had a massive factory the size of the death star churning out entire cows into delicious dried sticks of meat.
Plus there's all of the normal expenses a business has, overhead, packaging, shipping etc etc.
Jerky is a little overpriced, but it isn't as overpriced as you think.

Adding to this pure loss of weight (and money), you have to add spices cost, salaries, various maintenance and running costs. You can also add the drying process cost because while it is stored to dry, it is not selling. All of these factors adding up makes the final product price much higher than the price of fresh meat.

Not to mention the prep time. A good jerky marinades for over 24 hours and to make the jerky softer they have to do some kind of black magic. Its not easy stuff to make at that level. Making it yourself is good but no where near as good.

You see I would agree with you but what I've noticed is the locally made better quality jerky that has way more in each pack is only like a dollar more and sometimes about the exact same price as Jack Link's for example. So they're clearly charging too much even with the meat prep and production cost. At least for the name brands. I can accept that it's a more pricey snack but realistically I think they could at least knock a dollar off of the price and still be really profitable.
I buy Sugar River. They sell the scraps from these companies at a reasonable price. Recently, I purchased 2.5 POUNDS of spicy snack stick ends at Ollie's for $5, courtesy of Sugar River. I looked them up, and apparently, they get their stuff from Jack Links. So, hell yeah, I'll buy that. However, when it comes to the 'premium' brands, I steer clear.

as a Meat Cutter I can promise you they are all bottom round steak slices, AKA the 2nd cheapest ""steak"" you can buy, just make your own, get a roast have it sliced, buy the marinade, make your own for 5x the savings.
I swear back in the early 00's those bags were packed. Not literally but they always had a good amount in there. I remember going on roadtrips and me and my cousin eating sooo much beef jerky over the entire trip. Only had that one bag and there was still jerky in there when we got home. Its 100% a rip off these days, look at the weights, its like a few grams lol

Beef dehydrates and weighs much less once “jerked”, as a result they probably are trying to get a higher return in prices due to this. That being said, for those who love jerky, try making your own. You can make it taste however you want and you can use an oven. Smoking is also something that is labor intensive and time consuming depending on your amounts (used to make deer jerky with apple wood) but also highly worth it.
For those of you who love jack links jerky, Sam’s club will put it on sale for 12.99 for an entire pound. That requires a subscription, however.

Tbh when you're drying/smoking meat you lose 50-75% of the weight of the meat you're starting with, so for every pound of jerky, they're probably using 3-4 pounds of raw meat. Add costs for seasoning, actual time/electricity needed for smoking the meat, packaging, storage, marketing, shipping and you get to the 5$. Not saying it's great, but it's the same with many dried products - dried mushrooms are 3-4 times more expensive that fresh ones for the same reason, you lose that water-weight when drying them out, but you still gotta charge the consumer for the weight of the original mushrooms, otherwise it doesn't make sense to dry them before selling.
As someone who makes their own jerky, you won't believe the amount of shrinkage that the meat undergoes during the process. A few pound roast that could feed a family will be reduced to a pile of jerky the size of a large burger. Its expensive enough to make that I only do it when I can get beef for cheap.
