I don't think the presenter has day to day experience of woodworking in regional Japan, but a dumbed down version that sounds knowledgeable.
The hollow on the Nomi is called the ura. When the cutting edge gets close the ura, a tapping process is done called uradashi or tapping out. The soft steel is tapped using a genno hammer on an anvil or hard edge. This allows the back to be flattened again with enough steel behind the cutting edge.
I use a family chisel that's well over 100 years old that has used this process. Uradashi also required when a blade is chipped. Sorry difficult to explain but there are videos on the process on kanna blades which are larger. It takes practise but uradashi can be done in a few minutes. Some chisels respond better to uradashi, I've knocked the end of a chisel with a miss guided tap. The tapping is done by sound on the chisel rather than visual.

thank you mate, I learned a lot. It would have been more interesting if you applied these tools to actual work, for example the freeway coping saw to removal of dovetail waste. That is how you can tell if the tool is of any use.

At 2.30 minutes when he lays the chisels down, you can see the Japanese chisel is touching the surface all along it`s back . The Western chisel only touches the surface at the tip of the bevel. I have a Hultafors chisel that lays flat on the surface . Chisel handles from Japan do not align the handle and back in parrallel lines.
You gave a totally wrong answer to the question regarding what happens when sharpening a Japanese chisel and the sharpened edge gets very close to the hollow ground back of the chisel. Do your homework.
