- Keep your head up folks! Just wanted to drop these easy and quick to make meals that you can make with canned food like green beans, or canned beans. Things that also count as staple foods like rice, potatoes, tortillas, flour, etc. There's a ways to make all the things taste amazing, and I'm hoping to help a little with that.

Ingredients you'll need:
Focaccia:
1.25 teaspoons (5g) active dry yeast
3/4 cup plus 2 tablespoons (188ml) water (around 95-100f)
2 cups (300g) all purpose flour
1.5 teaspoons (8g) fine sea salt
Grape tomatoes, olives, onion, etc.
Extra virgin olive oil
flakey salt
Canned Green Bean Soup:
3tbsp (42g) unsalted butter
1 medium yellow onion, diced
2 cloves garlic, thinly sliced
4 oz can hatch chillies (thank you I hate it)
1 can green beans (thank you I hate it)
1/4 cup (60ml) heavy cream
1/4 cup (60ml) chicken stock or water
salt and pepper to taste
Congee:
3/4 cup (170g) white rice (ideally sushi)
6 cups (1.5l) chicken stock, or dashi
Soy sauce
Green onion
Fried garlic
Chili oil
sesame oil
Pinto beans:
1/2 lb (230g) bacon or other cured meat
2 poblano peppers, diced
5 cloves garlic, thinly sliced
salt and pepper to taste
1 can pinto beans
On a more serious note though: I'm a cook in a restaurant. I know grocery stores are sold out of everything, but restaurants are not. Me and my staff have literally spent the past few days trying to process all of our perishable food to freeze it so we don't end up throwing everything away. Resturaunt staff are taking this seriously everything is being sanitized, cleaned, gloves, the whole 9 yards. If you do need food and your grocery stores are sold out I highly recomend you call your favorite local restaurant and ask if you could buy some bulk/family style meals from them, or even just some raw ingredients. Local small business restaurants arereally going to suffer over the next few weeks. I'm 100% serious I think any locally owned restaurant would be thrilled to sell you 24 eggs, a whole pallet of bread, and 10 lbs of ground beef if you asked.
If you have any friends working in the resturaunt industry or you're a regular at a pizza joint- NOW is the time to capitalize on that relationship. Yes, the grocery store is out of rice, but the sushi restaurant down the street has about 400 lbs sitting in their Kitchen, and they're going to close because they can't sell any food.
I'd thought of this but I hadn't thought that restaurants would just sell their food. . . How much food is your restaurant keeping?

Even If your restaurant is clean, people should not go to restaurants at all if corona is going to be slowed down.

@NasTroy they’re not asking people to come and sit down and eat. I presume buying meals in bulk implies delivery, and coming to a restaurant to buy ingredients is no different than going to a grocery store, except that fewer people go to the restaurant so it’s safer

Update (4/2): Well the eggs and some paper stuff are back, but milk is in short supply 🤔. I guess the cows just gave up 😂 ! We had many different brands (3) of milk, but the more expensive “Crystal Creamery” is the only option 😔. For the price of one gallon Crystal I can get a 2-pack at Costco! But getting into Costco is ridiculous!!!
Signs everywhere saying: “Limit one per customer”. The signs were up nearly from the beginning.

Update 3/22: The meat counter was nearly full, unlike 4 days ago when it was depleted. Today some degree of normalcy has returned. Still out of paper stuff and eggs(?) tho 🤣.

True, If the state doesn't fail there will be basic food to cook with... The day after closing schools in my country all shops were empty, days after? They were full of all sorts of things and only 20 people in the Kaufland.

For real, the only things I had from this video were rice, sesame oil, beans, and soy sauce. And that's barely enough to make a sad beans and rice dish or an even sadder meal of just solely sesame rice. And for the latter, I had a summer where I was unemployed in college so that's all I ate, and I have no intention to go back to that.

@@dianalove539 Most sanitizers hospitals use can also be bought online or at pharmacies. We had a shortage of sanitizers because a) someone broke into the storage unit and took everything, b) people were stealing the sanitizers hanging all around the hospital and c) the prices went from around 10€ to around 80€ a bottle. Pls stop being hysteric lunatics, so people who are really in danger don't have to die from things worse than corona.

Hey, I might be a bit late but try proofing your foccacia a second time in the tray you’re going to be cooking it in. Takes a bit of time but the dough really encapsulates all the toppings and the juices get absorbed by the bread, and makes a lot of difference !

This is how I feel whenever I try new recipes for my partner and son (ages 28 and 6). Most of the time they just take their plates and scarf it down and say, "It's good.".......Okay but why is it good? Did you enjoy the flavor profile of this dish? How is the texture of the dish overall? What could I add or leave out next time?

My family does this too, but when they really don't like something they'll tell me so basically all I get is "it's good" or "I don't like this one"
yup.. i always ask but no feed back.. i tell them it's not because i'm fishing for comments, but because i want to make it better next time
Invite friends whom you haven't seen in a long time. Tell them to pick a recipe or pick one yourself, either have them get the ingridients or buy them yourself and split the costs among all participants.
The pure joy you feel when everyone is eating your food happily and then give you enthusiastic feedback as well as suggestions is something I wouldn't want to trade for anything in this world.
My mom also makes those questions, but I'm a line cook so I choose not to go into detail because I don't want to sound like the guy that thinks if something isn't perfect then it's not good

Thanks for the recipe ideas! I have plenty of food for now, but I've been trying to think of recipe ideas to stretch my groceries for as long as possible so I don't have to go outside for very long. Cooking is easy when you have tons of fresh ingredients and can plan a trip to the grocery store to get the ingredients you need for a recipe. It's quite a bit harder when you've run out of fresh ingredients, and you have mostly canned/dried/frozen ingredients.
I love pantry diving! Or “Chopped: Pantry Edition”! Think things like these are a good testament to someone’s culinary skill & knowledge. Also, video delving into “don’t have this? Then use this” would be a good video for the current state of things. Like 1Tb of honey equals 4Tb of sugar when baking kinda thing.
would sooner be that 5TB of honey equals 4TB of sugar, as most honey is ~80% sugar with the rest water and a drop of protein.

@@Tinky1rs honey is sweeter than sugar though, so if you bake with it it is more like cut the honey in half if you are substituting. Depends on your preference I guess but in my experience it's the safest bet

Life hack: If you want faster congee, wash and drain the rice then toss it in a freezer! When you want congee, just bring some water to a boil and put some of the frozen rice into the pot, stirring it until cooked to your desired consistency. It cooks so much faster because you're essentially giving it freezer burn before cooking. Only takes about 15 minutes to get a nice hot bowl of congee if you do it this way :)
Anna Wei this or use a pressure cooker. Once’s it starts steaming a lot turn off the stove and let it cook for another 10 mins with the residual heat and it’s ready.

Put in a pan garlic and onion and chili flakes and 1 anjovi and a few small tomatoes and some capers (all cheap bulk foods) add canned tuna and pasta and a little lemon juice (you can do concentrate) and pepper. Delicious! If you have more money you could top it with some cheese but this isnt necessary. Another one: fry some onion and garlic. Put a can of tuna and some light cream cheese in a blender till it's a sauce. Add to the pan with some lemon en chili en serve over pasta.
Another one: pasta with pesto, cherry tomatoes and rocket salad.
Another one: cook some rice. In another pan add onion and garlic and curry pasta and after a while add coconut milk (if this is too expensive you can buy coconut concentrate and just add some stock/bouillon or water) add some frozen broccoli or other veg and a can of chickpeas! Done
That's it for now I hope this also helped you a bit
Back when this video came out, I literally lived off the congee and the bean recipe for months because of quarantine. I absolutely loved both dishes every time I made them too.

Yeast just helps the gluten. Helps it rise faster. You dont need it. Just leave flour, water, oil, and salt dough in the fridge for a few days/week.

Pro tip from a cheap Louisianan: Dried red beans can go for about 2 dollars a pack, and a pack of smoked sausage is about 12 dollars for 3 LB/1.3kg. One pack of red beans and one pound of smoked sausage could feed your family for 2-3 days for super cheap, tastes amazing, Incredibly filling and you get a lot of nutritional value from what you’re eating.

Beans are very nutritious and high protein but I think that meal lacks a bit of carbs, yeah I think people need em, so I would add potatoes or some tortillas, wich could be easyli substituted with corn, my all-time favourite

To those overbuying: I Literally bought like two bottles of little sanitizers a 1 month ago. I use it like a crazy person and the first bootle isn't even 1/3 done yet. Now I'm stuck at home (Canada we're doing some serious social distancing) I just wash my hands so the bottles are still in the same place. Soooo. My point 👉
Don't even try to reason with people who overbuy. There is no reason behind it. It is just to feel safe and it doesn't make sense. I mean there are people who fill their shopping carts with toilet paper. I think if you aren't stockpiling essential things like food you would die before even going through one pack (which probably lasts for 3 months or more)

Seeing those empty supermarket shelves gave me PTSD. Good news is, the Indian, Asian, and Arab markets went untouched and stocked all the food. I purchased dry lentils in May, and I still have some left.
I had all the rice, beans and pulses, dumplings, and noodles that I needed.
Day 27: It’s getting really hard living in the cabinet, but I can smell a lot of good cooking, and Josh feeds me once every 2 days but I’m thinking up a plan to escape, wish me luck

I made the congee with a soft boiled egg and Thai grilled chicken. I drizzled the glaze all over the dish w sliced green onions and sesame seeds. Almost died. So good. I would have never considered doing this until this video. Thanks for the inspiration!

Yeast just helps the gluten. Helps it rise faster. You dont need it. Just leave flour, water, oil, and salt dough in the fridge for a few days/week.

I've always wanted this as a TV show. Drives me nuts watching these competitions where they have a pantry full of stuff. I want to see chefs battling it out with a bottle of ketchup, leftover pizza, a napkin and four year old jars of various spices...
I just wanted to come back, to say, that I've been making the Foccacia like 5 times since the posting of this video. Done it with tomatoes, onion or zuccini so far, and everytime it was amazing!

Made the focaccia and the congee!!!! Thanks for inspiration and the recipe! It turned out amazing. I did herbs instead of tomatoes for the bread. For the congee I did dashi and broth and added garlic, green onion, and ginger and to dress it I used more ginger, chili oil, chili flakes, and kimchi!

Back when it all started, we ate well because everyone took all the shelf stable stuff so we got easy access to veggies and my dad had done a little doomsday shopping last year so we had decent canned store.
I was 50 seconds in and I knew....THAT THE FLEX WAS HAAAAAAARRRRDDDD while on a budget/self-isolated.
