Peanut Butter & Jelly SANDWICH COOKIES

Happy baking! Get ready for some Valentine's day tutorials :)
Ingredients:
-200g butter (room temp)
-330g sugar
-172g brown sugar
-375g peanut butter
-150g egg (3 large eggs)
-8g vanilla extract
-338g rice flour
-9g baking soda
-3g salt
bake at 365°F for 8-12 mins (or more if needed)

Love this! Especially using rice flour instead! Could I make this using cashew or almond butter instead?

You can definitely try! I’m not sure they will bake up the same way because I’ve never done it myself but there’s no harm in seeing how it goes! I would make a really small batch to test it out- just incase it doesn’t work. Then you’ll have wasted less ingredients than if you’d done a full batch :)
