Regarding the noise at high ISO: give HLG a go instead of V-Log. On the Panasonic G9 and GH5 II the dynamic range is nearly the same (perhaps 0.5 stops lower on HLG) but the noise is Waaaay lower. V-Log is noisy and indeed on the GH5 II and G9 anything hither than ISO 1600 seems unusable, while 6400 ISO on HLG is usable even with some noise.
Months after its release, I continue to monitor the web (RUclips and Vimeo) for content created with the GH7 and, to my surprise, there is very little content available (often from the same 2-3 users). Ironically, the much-maligned GH6 has been much more successful, with many more productions made with it since its inception. Personally, I find the GH7's specs very solid, but I was hoping they would introduce a dual-slot option (like the Sony A7SIII) instead of forcing users to buy an expensive CFexpress card for a backup option. The internal raw video is nice, but how often will you use it? Personally, very rarely. Given the same low-light performance, if I had to choose, I would rather save my money and go for the G9II, which at least has two SD card slots (and I already have plenty of those!). Chances are, many others have felt the same. Since I already own a GH5 and a GH5s (and considering that no other MFT camera matches the GH5s in terms of low-light performance), I think I'll continue to use the one I have for a while longer!

I dont own the GH7, but want to use it to film runners on a gimbal with a fast lens, to obtain a 3D pop. Which gimbal/lens combination do you recommend?
You dont use a GH7. I do it for a living and even with a 35mm f1.8 you dont get the "pop" you looking for. Image and colours are great but very difficult to get subject separation. Get a full frame.
Very surprised to hear you talk about the ISO max for you being only 1600. That was my Max on the GH5 (if not a bit higher) and the GH6 had a native iso of 2000 and this camera is as good at that iso. My personal limit is closer to 4000 but I suppose this is down to personal taste
Gh7 is almost perfect. The only thing that pisses me off is that they removed open gate 4k50 which is the only mode i used with my gh5. 5.8k is 25p only which is useless for me as i need slo mo. No open gate in 4k50 is what makes the gh7 a expensive downgrade for me as i am not able to do with it what i did wirh my gh5.. the image and everything else is better than the gh5 tough
I understand you're frustrated about that. There is the 5.7K 50fps mode, though. It is 4:2:0 10-bit, so that is a downgrade on the subsampling, but it might still work for you?

I'm pretty sure with a 24mm f2.8 lens and a smaller gimbal you wil get perfect shots!

The v-log is the full log. Cinelike is the light version.
