Simple Homemade Blister Peanuts Recipe

  • Blister peanuts are a somewhat old-timey snack, as this was a common way of processing peanuts to cook them and remove their skins in the days before thoroughly industrialized food. The peanuts could be shelled mechanically, then soaked, drained, and fried, during which process the skins would come off quite easily. Salt denatures oil, so it is probably better not to soak the peanuts in salt water.
    It is very easy to overcook the peanuts. Use a thermometer and keep the oil around 375°F. If you have a deep fryer this is certainly a reasonable application for it, of course. Time the peanuts in the oil and remove them after 3.5 to 4 minutes. They may not show much color, but once they come out of the oil and cool they will start to color, and how much they color may be a surprise.
    Makes a pound of blister peanuts.
    Equipment:
    • large mixing bowl
    • collander or large strainer
    • medium to large saucepan and deep-fry thermometer
    • slotted spoon, spider, or fry-basket
    • deep fryer (optional)
    • plate or wide bowl lined with paper towel
    Ingredients:
    1 lb peanuts raw, without shell or skin
    2 cup water boiling
    1-2 cup frying oil peanut, canola, grapeseed, cottonseed
    to taste salt
    Procedure:
    1. Place the peanuts in the mixing bowl.
    2. Pour the boiling water over the peanuts.
    3. Allow the peanuts to sit in the water for 30 minutes.
    4. Drain the peanuts and set the collander in the bowl, allowing the peanuts to drain for 30 minutes.
    5. Set up the fry pot or deep fryer with adequate oil. Especially if using a saucepan, you may choose to do the peanuts in batches, minimizing the amount of oil required.
    6. Once the oil in the fryer has reached 375°F, add the peanuts.
    7. Allow the peanuts to fry for no more than 4 minutes.
    8. Remove the peanuts from the oil, allow them to drain, then place them on a paper towel on a plate and salt them or otherwise season them as desired.
    9. Allow the peanuts to cool completely before storing in an air tight container in a dark place at room temperature.
    10. These peanuts are best consumed within 2-4 weeks.

    If they look a little pale in the oil they're already done. Well said Sir, in my experience with virtually any nuts, the difference between perfectly cooked and burnt is virtually seconds and the carry-over heat further cooks even when they are out of the pan or the oven,... etc.

    Excellent easy recipe…..thank goodness I only made one cup today….I ate half of them already. I fried them for exactly 5 minutes. Once the foam disappeared, they were a beautiful light brown.

    Avocado or coconut oil would be a non industrial way to go. Cold pressed peanut oil would rule this.

      Quick tip: season them while they're still hot coming out of the oil. We just used salt, but you can flavour them however you like!

    If we can’t have access to raw peanuts, could we modify the recipe with other types like maybe dry roasted or salted peanuts by just skipping the boiling phase?

      Unfortunately you won't get the same effect if you're not using raw peanuts. They blister because they have a higher moisture content, even before the soaking! Dry roasted peanuts typically have a coating that will burn in the oil quite quickly. The salt from salted peanuts will denature the oil, and you still won't get the nice blister effect, they will just darken and possibly burn quickly.

      @@auburnengineer You may be able to get raw and unseasoned peanuts through online stores. There are a few online food shops that specialize in nuts and peanuts.

      You do want them to retain some moisture, because that's what causes the distinctive bubbling! You certainly don't want them sopping wet, but don't let them dry out completely.
