My wife was given two dozen quail eggs by a client and we had no idea what to do with them. Eighteen of them survived the entire scotch egg process and they were fantastic! Thank you very much for the video. This was a simple yet complicated recipe for me and I was able to get every dish in the kitchen dirty. I would definitely reserve the better part of a day for this recipe as there are many steps. Definitely worth the effort though!

Scotch eggs are a childhood favourite of mine! This variation I must try! Granny made great Scotch Eggs, but I never saw quails’ eggs in stores until recently.

Happy to find a quail egg recipe. I raise quail so look for ways to use the eggs. I prefer these mini eggs to the large chicken ones because they are fun to pop a bite of. I also prefer this recipe using pork rather than prepared breakfast sausage like most other recipes.
I raise about twenty quails.

Hey would you use boring rapeseed oil in that sauce when olive oil would add very complementary flavor?
The oil is grown and made locally to him.

it does not matter if you cook eggs between 2-3 minutes, still good an tasty , and when ready put some some "meat" on your palm , flatted with your fingers put the egg in the middle and wrap the egg, easy an less complicated :)
