Everybody tells you what is good and what isnt but the why behind it is not always explained. Medium-rare steak is best for me. 131-135 degrees is what I like. Anything above that is shoe leather. A friend I had wanted them burnt. I don't like hockey pucks! :)

A ton of people were raised to believe anything but well done is "raw" and "bloody" and gross, and it just isn't true. For the 5% who actually prefer well done... I don't understand it. That's why when you make up patty's, it can't be medium but has to be cooked right through. The surface meat could end up in the middle of the burger with the bacteria on it.

Here in Belluno we have the "pastín" (60% beef and 40% pig, it is the raw base for "salami", eat like balls or sausages) is so DEEEEELICIOUS !!! cook them 1,5 minutes max for side and put in bread with a little lemon sprinkle ... Maybe Randy know or remember, it's similar to the cevapcici ... Gorgeous 👋😋🇮🇹
assuming that the cut is boneless, any bacteria can only live on the surface of the meat so even going so far as to salt the meat and let it sit in the refrigerator for at least an hour is enough to kill the bacteria

I already knew about the myoglobin but I go to Texas Roadhouse in Garland and they either don't cook the steak right or I just don't like the rubbery taste of medium rare. I still need to try rare I might like that since it'll be "juicy" how people say, but the only time I've ever had a juicy steak is when I eat a well done steak, a lot of the time they fail to even render the fat, or fail to do the most important step in actually killing the bacteria which is to sear the steak! I've had so many steaks that weren't seared, the cooks should be fired, honestly, I make a better steak at home, I just don't know what seasoning to use or buy the best steak I can becuse of price. Sometimes I do get a perfectly cooked steak from Texas Roadhouse but I'd say it's about 1/20 chance and when I cook it it's cooked perfect 1/3 but it still tastes worse, if I could buy their steak rub online I would. Also you can eat groundbeef rare or medium rare up, there is an alcohol that restaurants use to kill the bacteria so they can cook it whatever temperature they want.
Can you try this experiments 1- sear a steak super hard, then use a deli slicer to shave off the first layer , then sear the layer after really hard and so on. So you get Tens of little maillard carmilized slices of beef
I made two videos with Ninja last month and let me tell you, he worked his butt off. We did the rib video and we spent 12 hours just setting up, filming and then cleaning the set. I prefer super rare (and even black and blue), but to each their own. Heck, I even eat raw steak and ground beef sometimes, but only from places that I know handle their nest extremely safely. One small correction though.... with some birds, it is safe to eat rare to medium rare. Ostrich is one domestic animal, but for wild animals, medium rare duck breast or dove breast is safe (I think it's different for domestic animals), and there might even be others that I'm not aware of.
camera quality and shots are great. you need to work on your audio however -- it sounds muddied up and can be hard to understand you sometimes. If you are using the camera mic, i recommend a zoom h6 recorder or go professional with a boom mic and a room mic for a complete mix.

Does thickness of the cut of meat play a part? With a thinner, boneless steak, for my steak & eggs for instance, I like rare but with a beautiful thick-cut steak for dinner, like you show here, medium-rare is desired. What do you think?
I Think Ninja said duck, like chiken, needs to be well done?. I have no idea what other country's food safety protocols is, but in Denmark it is very normal that duck breast is cooked just like steak. It can be cooked rare if you want, and most Danish chefs serve it that way. I didn't know that was not recommended everywhere.

Douglas Baldwin has a website "A Practical Guide to Sous Vide", and he writes that long sous viding as low as 131 degrees F. will pasteurize meat. 140 Degrees is only for brief cooking. He has charts and information as well as tests showing his research on the subject. And he has a Phd. in Biology, so he really knows his stuff!
I'm a med rare/medium guy myself. The first time I had medium pork was at my friends restaurant in Slovenia, It was delicious to say the least! Ninja, we have to do another video soon, before I go back to Slovenia!
You really taught me the value of a good meat thermometer when cooking pork tenderloin (because I always uses to either over or under cook it before!). Now I swear by it for cooking all meats! Learned something new again from you in this video....always cook ground beef well done. Never thought about the bacteria that could get in ground beef due to the grinding process!
It's is like anything else. Some times I decide that a good filet mignon tartar is the way to go... and that is grounded meat raw... 😀😀 Of course that day I know that I'm willing to trade some bacterias for a good delicious meat! 😀
@@SaltyTales I would say the safest way to go is grind your own. That way you know how well you cleaned the equipment. My grandmother introduced me to steak tartar when I was just a kid. I was a little afraid of it, but man does it taste good!

I have found out that blood is the true responsible factor that makes all meats taste gamey, even beef. Game meats need to be "kosherized" to remove most of it (even a marinade will not be enough). Yes, blood tastes super strong compared to meat itself and it looks different as well.
I do agree with you but blood is also what give that characteristic flavor to meat, a perfect combination between blood and fat is what makes the perfect steak.
Yes I agree with that. You can eat row pork in Japan and even Tartar beef in many places, that doesn't make it safe... but it has that flavor of risk which it is awesome too! 😀😀
I work at a steakhouse and whenever someone comes to back of house with a well done steak order I guarantee you everyone that hears will have something to say 😂
Some like raw blood taste some like it cooked ... everyone has their choice. But people getting pissed for ordering well done ... I think they get angry too when someone takes their oxygen from atmosphere.

Douglas Baldwin has a website "A Practical Guide to Sous Vide", and he writes that long sous viding as low as 131 degrees F. will pasteurize meat. 140 Degrees is only for brief cooking. He has charts and information as well as tests showing his research on the subject. And he has a Phd. in Biology, so he really knows his stuff!
so what tastes better to cook it on the grill or boil it in a bag? asking for a friend....lol

You really taught me the value of a good meat thermometer when cooking pork tenderloin (because I always uses to either over or under cook it before!). Now I swear by it for cooking all meats!
Learned something new again from you in this video....always cook ground beef well done. Never thought about the bacteria that could get in ground beef due to the grinding process!
It's is like anything else. Some times I decide that a good filet mignon tartar is the way to go... and that is grounded meat raw... 😀😀 Of course that day I know that I'm willing to trade some bacterias for a good delicious meat! 😀
@@SaltyTales I would say the safest way to go is grind your own. That way you know how well you cleaned the equipment. My grandmother introduced me to steak tartar when I was just a kid. I was a little afraid of it, but man does it taste good!

Thank u mr ninja for the fun facts of what percent of people like their steaks cooked to. I use a thermometer on all my meat and I cook my steaks to a perfect medium rare while my wife likes hers a little more rare than mine. Keep the great videos coming.

I have found out that blood is the true responsible factor that makes all meats taste gamey, even beef. Game meats need to be "kosherized" to remove most of it (even a marinade will not be enough). Yes, blood tastes super strong compared to meat itself and it looks different as well.
I do agree with you but blood is also what give that characteristic flavor to meat, a perfect combination between blood and fat is what makes the perfect steak.

You should tell which temperature scale did you use, Celcius or Fahrenheit.
If you cook a steak to 130 C internal you end up with coal. it's not rocket science, man.
