You are so wonderful! I just took over doing the "books" for my husband and his small business. I just realized that I just "cleaned up his books"! I thought it was me, but watching this video showed me what I was actually doing! I laughed at the beginning when you did the walk in the park vs muddy mountain climbing. You should be familiar with legal entities and tax entities. You should also have a general knowledge about how payroll works.

Can we instruct a client to keep receipts and not mix personal with business transactions if they hire me to do their books?
Yes, you should absolutely instruct and require your client to not mix business and personal transactions. As for receipts, the client is responsible for maintaining receipts (not the bookkeeper). The client should keep receipts but ultimately you cannot force them if they don't do it.
