I got a suggestion for you guys if you are still here in the north. Usually the metropolitan area don’t have what is considered good cabrito, because it’s massive population, you need to travel outside to the little towns nearby, specially north east Monterrey. Where the traditional cabrito is best obtained is in the Cerralvo-Herreras-Ramones region. Any of those three towns will have amazing cabrito. The tradition calls for the cabrito to not pass 2 months old, and MOST IMPORTANTLY, to never have eaten anything but it’s mothers milk. Once it eats anything but the milk, it’s not considered cabrito anymore. Which is something hard to achieve for such a massive metropolitan area like Monterrey. The Herreras-Cerralvo-Ramones región has a special soil, where the plants that the mother eats is more “mineraly”. I recommend traveling to either Cerralvo or the other best Cabrito I’ve had is Mier y Noriega, which is also in Nuevo León, but further down south and it’s like a 6 hour drive. And also, most people go for the legs, but the best part of the cabrito are the ribs. Cabrito is one of the remnants of the 16 families that created the northeast of Mexico. Our Sephardic Jewish ancestry.
Muy,muy dificil ser delgado en Mexico. La comida es deliciosa. Creo que es porque todos los ingredientes son de lo que siembra la gente de los alrededores.
As someone who bleeds Nuevo León culture history and tradition, pipiripau is just a’ight. To get the best, old fashioned, cultural cabrito representative of our ancestors, you need to go to places where the Nuevo León ancestry lives on. And that’s in the small towns in Nuevo León and Coahuila. Cabritos in Los Herreras, Cerralvo, Ramones and Mier y Noriega taste the best because the traditional way of growing the cabritos overpowers the demand to sell more commercially growned cabritos. The taste is vastly different and it’s definitely worth the one hour drive from Monterrey to Cerralvo or Ramones.
I wasn't able to watch until now because of working out at the fair. Its funny because I am working with St. Gregs monks selling steaks and they are also serving the Coconut drink you tried. Its called a Coquito and is really strong, its meant to be drank in sips with the melting ice to last longer. Lemon juice might turn the creme into curds, that is why its not a good idea although you could use lemon zest and be fine. Horchata is the rice version.
I am from Saltillo, very close to Monterrey but I am not much into cabrito, it's kind of weird for me to taste a meat that taste to milk but well. When I was working in a job I was sent to San Luis Potosi, they have a delicious food try tortas ahogadas (it is a bread stuffed of leg beef covered of a sausage) and try enchiladas suizas (they are like flautas filled with chicken meat covered with a green sausage). If you are in a crowded city you can see a Sanborns which is a store where you can find many things most of them pricy lol, but upstairs they have a restaurant with very different and traditional food and not much expensive, it a clean, and well service, washrooms, etc. Oh close to Monterrey you can visit grutas de Garcia it's like the santo Madero which you already visited but here you can get into the mountain and see the forms of the minerals have formed inside the mountain.
