Not every vegetarian knows this or avoids cheese because of it but if you are a strict vegetarian there are a lot of cheeses you can't eat, and parmesan is one of them.

I had to strain the mixture through a fine mesh sieve because my blender wasn't powerful enough to also blend up the tomato seeds and skin bits, and that took about a solid six minutes or just stirring it around in the sieve so all the liquid would get through. I simmered it with some veggie stock (maybe 3/4 of a cup or less, I didn't measure) and maybe 1/2 cup of cream (or more), but I think that amount was too much and canceled out some of the roasted flavors. I added a dash of cayenne, a lot of salt and pepper, some Italian seasoning (but probably not enough to actually matter flavor-wise), and the secret ingredient: four dashes of fish sauce, which added some depth and umami to everything (fish sauce is the secret to a good chili, too -- I'm sorry, veggies and vegans out there). It turned out exceptionally well (not five servings, but maybe three 2-cup servings), and I would definitely make it again with a few adjustments: more tomatoes, less cream (if any at all), more cayenne and some other spices (paprika?) -- and I think floating a basil sprig in it while it simmered and removing it at the end would be really tasty, too.
Edit: It was AMAZING! Love a one dish meal :) I saw this short on my feed earlier today and definitely had to give it a try. That's what we're having for supper today 🙂 thanks for all of your simple and delicious recipes.
I'm loving these recipes! What I'd be interested in to try them out is a kind of shopping list of common basic ingredients, especially spices and sauces that you use a lot. Once I have them I'd feel way less intimidated trying to cook these myself!

Infact the reason why i have never tried jackfruit is also the same that it tastes like meat lol, just yesterday our neighbors cooked meat or fish and smell came into house and i had nausea, almost vomited.

Delicious ❤ Plus, I live in the tropics. There's a lot of soups and stews we eat year round. So we don't have 'soup season' 😄
Soup like this, tomato based goodness, is all seasons - though I'm more likely to add extra pepers in the summertime or sweet potato/squash in the winter. Big thick meaty stews are wintery vibes, though. And you need to live somewhere really warm to eat gespatcho in anytime other than mid summer.
I like cold soups too, it sounds a bit funky but lots of cultures make them! I like a cold egg drop soup, basically it’s made the same way hot, but you cool it down and refrigerate for not too long but until the soup is chilled, and you drink it.
I've been making this since you posted the first version of the recipe and it's my absolute comfort food, I just love to make it a little spicy with chili flakes❤
