Is he from the UK? England is so lucky they have vegan pizza takeout. Same for some parts of Canada like Toronto and Australia but in America wow finding vegan pizza is going to be an three hour journey back and forth

I don't have the time, energy, or patience to try Gaz's recipes but I love him. He seems like such a nice guy, and has so much passion for what he does, and the food always looks amazing. I would love for him to have a cooking show on TV but for now I'm glad he has a youtube account :) Also his voice is so relaxing
You need to wait till the liquid mix gets cool before adding the gluten flour or it makes the mix spongy. I learned that the hard way making homemade sausage rolls.
Love Gaz, I find his voice very therapeutic. His recipes and videos are quite easy to follow and sometimes do need a lot of ingredients but since he is a professional chef, I trust him and his way of doing things!! So glad you got to try his recipe and loved it!! He'll be very happy to hear your positive review!
I feel like you have grown a lot in your channel and you’ve evolved your style a lot and it just makes me like you even more! I don’t want to knead these by hand but i might have to!
It kind of gives me anxiety when you fork the meatball and are about to eat it and then ramble on for 45 seconds moving the meatball up and down and almost biting it.... JUST BITE ITTTTTTTT
Whenever he makes seitan you have to knead a lot in the mixer with your hook or hands 10 -13 minutes keeps it from being spongy. But hands down you both are my fav vegan cooks! I would love to see you both get together to make an incredible recipe!
I have found that if I put my crumbled tofu into a nut milk bag or cloth and squeeze out most of the water, it works much better for tofu scrabble and probably would be a good idea for this recipe too! I am excited to try it!
Great video and recipe. Gaz Oakley has one of his recipes available through wagamama (a Japanese takeaway/restaurant in the UK). I definitely will be going there when I next go through to Glasgow.
I totally agree with you about making seitan...I have made the same recipe several times and it comes out a little different every time...(Gaz's Roast Chicken, you gotta try it, it is really nice as cold cuts for chicken sandwiches). I had to look up what poutine was. I’ve never heard of it. I have to say, that is probably one of _THE_ weirdest dishes I’ve ever seen in my life! Nothing about it looks appetizing… Whoever dreamt that up was clearly high on drugs lol.

I’d go with the PAN FRIED ones because my family is Sicilian and my mother ALWAYS pan fried first and then added them to flavor the tomato sauce before serving with pasta! ENJOY!!! Love your BOOK!!!!
I bought his book of recipes. Although awesome, they have a ton of ingredients which can be intimidating for someone who doesn’t like to cook or have the time. The end results are ALWAYS worth it. 🤗
I can’t stand recipes with a million things in them - not just because it usually costs a fortune to buy everything, but you usually end up wasting a lot of the ingredients because you never need the rest of the ingredients for any other recipe you normally make, so it ends up going bad.
The most labor intensive recipe I ever tried was the RFD Burger from Ann Gentry’s Real Food Daily cookbook. (And on the menu at her Real Food Daily cafe in LA). It involved roasting and the food processor and a sauté pan, etc. They were good but I’m such a lazy cook. I would love to see you make those and inspire me to do them again.
Unless she has more than one cook book, I have it too. I bought it in hopes that she would put her delicious tempeh recipe in it that I used to get every time I ate at her L.A. restaurant (I believe it was grilled), but I couldn’t find it in the book. It seems to have other tempeh recipes, but they don’t look the way the restaurant served it in L.A.. I miss that distinct flavor and texture that only their restaurant could produce! 😢😢😢😢 I moved away from the L.A. area nearly 20 years ago, so it seems like a lifetime ago that I got to taste that bomb ass recipe. I really should cook SOMEthing out of that book someday though, so that it won’t be a complete waste of money. Nothing like buying a recipe book for one recipe that isn’t even in there. Lol. I remember being overwhelmed when I did look through that recipe book after I got it, just because so many of the recipes require a shit load of ingredients in them, and many of the ingredients I’d never even heard of.
I'm so happy you did this ! I'm considering buying Gaz' s book but wanted to have an outsider's opinion first. And since I trust your good tastes, well, I know what to do now.
Glad I watched this because I ran into the same problem of having the first mixture having too much liquid. Looks like you really need to simmer it down. Also good to see the tip by another commenter about cooling it down before adding the the gluten. The simmering alone took me at least 45 min to replicate the amount he had before the kneading. I don't have the same colouring either.
I fully appreciate the effort. I think I have simplified it. Or complicated it. Anyway. I make a sausag-ish seitan, steam it, cool it, then I chop it up and blitz it into crumbs. Add some moisture or flax egg to bind it. Then pan fry or broil. Makes a good burger that way, too. TVP can be finicky, at least where I live. We do not have TVP mince, we have bits that need to be soaked then blitzed, then cooked similar to rice. THEN you can flavor and make meatballs or burgers, or even cevap. Vegan cevap with homeade Lepinje. ura!

Hola from Spain 🇪🇸 I love mr oakleys recipes and I tried this one but it was a disaster 🤣 though have to say, it was the first time I had ever attempted seitan and I messed it but up spectacularly. It went from baking tray to the bin, even my dogs ran. I have done a little more research now and your vid really helped so I will try it again. Pray for me. 😅
trying to figure out where mine went wrong! Came out very gooey inside! So much ingredients! Too much to waste so will probably mince the balls and make taco meat at this junction and try again! I agree that making the tofu mix dryer may work, and maybe more kneading?
You know, that's kinda what you would do if they were meatballs made with meat, so it kinda makes sense. I'm trusting this recipe more because it does take the same amount of effort.
You need to use a dough hook to knead it, the beater is fine to mix but it doesn't knead well. I make a lot of bread and my dough hook is trusty friend 💖
I was going to comment the same thing! The restaurant I work at we use the dough hook to knead our seitan. It helps to form the gluten better and really gives it that perfect texture. :)
I like watching his videos but wouldn’t try his recipes cause they’re too hard but it’s nice to watch! Would def visit his restaurant once he opens one.

Yeeeahhh, I think I'll stick to making mine with rice flour and mushrooms. It takes 15 minutes. :) That's about how much time I have before the hanger sets in.
I’m not a mushroom fan but this might be a good way to introduce them. Also I think I would use beef or chicken flavored both to mimic more of the meat flavor. I’m thinking meatball subs 🤔😁

You should do Hot for food's breakfast lasagna. It looks super delicious but very long to make, Hence why I 've never tried it.
