  • If you are still looking for something delicious to add to your football table, try this. It doesn't have to be football season, just any reason to make it. It is delicious and so easy to make. Use your little leftovers of cheese like I did, or, grate your own. Either way, you will be happy you made it. Recipe below.

    Ingredients:
    4 cups of grated cheese, your favorite cheeses
    4 oz cream cheese, softened
    1/8-1/4 tsp red pepper
    3/4 tsp garlic powder
    3/4 tsp onion powder
    1 tsp paprika
    1 4 oz jar diced pimentos, drained
    1 4 oz can diced green chilis, mild or hot, your choice
    1/4 cup mayonnaise
    2 Tbsp sour cream
    black pepper to taste
    Directions:
    Blend all ingredients gently in mixer. Serve with your favorite crackers, on a sandwich, or try on a hamburger.

    Looks good. I do always grate my cheese. I also add a little sugar. Will try some of your additions.

    This should be called Everything But the Kitchen Sink Pimento Cheese! I'm more of a purist--I freshly grate cheddar cheese, add well-drained pimentos, a pinch of sugar and enough Duke's mayonnaise to make it spreadable. Sometimes I add a splash of hot sauce, too. You've got to have a good quality, fresh white bread because I don't toast it. It's fun to cut in quarters like we used to do for wedding/baby showers.

    Great way to use up partial cheese bags....this looks so good. Thanks Karen...so nice to make something so delicious while using up leftover cheeses that could end being wasted. I do love pimento cheese....I like it on celery too. I see Miss Patchy is waiting for a bite also...can't blame her....lol. Love and Hugs.

    I love pimento cheese and it’s been a while since I’ve had it. We are cheese lovers in my house and now I have something to do with all that cheese we have left in multiple bags! As always, thank you for the inspiration Karen!

    This has got to be delicious. Of course it really needs to sit in the fridge for hours to get the true flavor. I make mine with 4 jars of drained pimentos, 16 oz shredded sharp cheddar, and 16 oz. diced velveeta. I make it in a food processor so it’s smooth. The next I make I want to finely dice jalapeños or habanero peppers. Only like a tablespoon and 1/4 tsp. ground cayenne pepper. I’ve not put fresh peppers in mine before but SaveALot sales it with Jalapeños. I need to make some this coming weekend. Thanks for inspiring me. ❤❤Love you mucho whole bunches. 😊

    I also follow another, she was shredding cheese like is was butter I always grate my on cheese, what a pain, in her comments asked her about the grinder she was using, I bought that machine, Best since sliced bread, store bought shredding cheese with that potato flour gives me heartburn, can’t remember the last time I bought something this GREAT. you like easy , this sweet little grinder is EASY,8 oz block 30 seconds, same grind size as those store bought bags of cheese.

    I’d add the full 8oz of cream cheese, 1/2 green onions and spread on sourdough. Maybe sliced tomatoes on top and broil…..mmmm. Thanks Karen 😊

    I love pimento cheese! I love the way you cook and use stuff up because that’s what I do, too. I will try it as a grilled cheese sandwich, awesome idea!

    Duke's mayonnaise is the best! My grandmother lived in NC, and so we'd drive from IL to NC every year to visit. She always made sure that she had pimento cheese and Duke's in the refrigerator for us! You have no idea how happy I was when we finally got Duke's in our stores up here 😋

    We love pimento cheese and I make it pretty often. I’m like you, I use up left over cheese and we love the cream cheese in it too. I don’t ever drain my pimentos. Thanks!

    I love a good pimento cheese spread…yours looks yummy and I’ve saved it..I usually grate my cheese but thinking I’ll take your shortcut and used bagged shredded cheese.. and I never thought to add mozzarella…double yum❤

    Love pimento cheese! Never thought about using 2 kinds of cheese or tossing in Hatch Chilies. Love your serving concept, like a charcuterie board. Pimento also goes well on celery sticks. Fresh parsley from your garden would have been nice. How did your raised beds do this year? My roommate's tomato plants took a beating from the heat as did most of her herbs.     I grate my own cheese fresh. That bag cheese is very unhealthy. To much fat.
