It never occurred to me I could use leftover simple syrup in a bbq sauce! - takes notes - Gotta say, that pork belly is gorgeous every step of the video, thanks for the great lesson, Chef! (now I'm thinking of grabbing some pork belly from my local market, can't smoke it where I am, but lechon kawali is always a good idea lol)

What is up with the time and temps on this, I literally have only ever seen sous vide que pork belly burnt ends cooked at 155 for 24 hours on every recipe ever. went on Reddit today and it seems like everyone does 170 for seven...
I smoked it for quite a while before putting it in the sous vide bags and in the water
@@ChefMikeDoesStuff Smoked before??? Again have never heard of such a thing. SVQ is ALWAYS pasteurize, ice bath and sear/smoke back to temp

I am trying to introduce people who are not comfortable in the kitchen. I even made a note while editing that I screwed up and filmed in vertical mode. That’s something I do and leave in all the time.
