Hari OM Love your morning chats and evening catchups! I have always been solo, so I know how it can be easy to start neglecting proper nutrition. It is an effort sometimes. I do actually like to prepare from fresh as much as possible, but have become a bit of a mistress of the one-pot-wonder; particularly now am living mostly in the van. Now the weather is chilled, I am back into making thick and veg-packed soups, having this with a crusty roll filled with protein of some sort (for me that is cheese or egg) is very satisfying. And soup is the easiest thing in the world to throw together, then you can freeze different batches, so it can be just a once a week job. I'm also a huge fan of baked potatoes; for speed, pre-cook in the microwave, then just finish off in the oven for that nice skin. Fillings are endless for them... I like the crochet/knit combo! YAM xx
Hello Yamini, I also prefer fresh home cooked meals. I always am suspect of prepared foods, even restaurant ones. I always have potatoes for baking. You are right. The perfect one person meal. Of course the toppings are so necessary. I'm not much of a soup person. But maybe I'll give it a try.
I love the picture and the story behind it. I’m sure it’s all the more special to you since Ross took it. Your hat is great! You’re an adventurous knitter/crocheter. I’d never have thought to try that, but I plan to soon. Baked potatoes, russet or sweet are a good option if you’re a fan. You can top a russet potato w/chopped turkey or roast beef that you picked up from the deli. I like butter & cinnamon on my sweet potato. I add brown sugar on my husband’s (I don’t eat sugar), and he’s content with it for a meal. I love that Knit Picks yarn, how pretty! I’m playing catch-up, so I’m off to watch your next one. I’m enjoying them!

Hi Lynda, it’s hard cooking for one person, I know I have been doing it for a few years now and for me the trick is to cook a few dishes once a week and put into containers then all you have to do is place in the microwave at meal time. I agree with you on the no pets. I love animals but when one reaches a certain age one only wants to take care of one self. 🧶🎄
I like the idea of meal prep and planning. think once I get more settled, I will be doing that too. And about the pets, I appreciate your understanding! You get it.

Your hats are amazing!!!! I’m a single mom of a now adult child. Just she and I. She still lives at home (saving for a house if they are ever affordable again) anyway often it’s just me for dinner and it’s not much different than cooking for two. But she and her current boyfriend get Hello Fresh 2 a week this takes the guess work out of what to make, and it’s fun. So that would be my only suggestion for meals for one. Sending warm hugs! I’m not on threads..yet.
P.S. I love your sweater. Please tell that story.....and that scarf! Your knitting is beautiful. I immediately had to cast on a scarf of sock yarn scraps!
