The retired superheroes weren't getting paid by the government, that's why their relocations included getting them jobs to support themselves. The "triple your current annual salary" that Mirage mentioned was based on the job he just got fired from (he hadn't been fired yet when she left him the tablet).
Note that the family, watching from the ground, could not see what was going on with Jack Jack as he was being abducted by Syndrome. Helen even says "Something's going on. What's going on?" So at the end of the movie, the family does not know about Jack Jack's powers. Only we in the audience know. Buddy knew but he is dead. And Kari the baby sitter knew, but we learn in the short film, "Jack Jack Attack" that her memory was wiped by Dicker. This is a nice setup for everyone discovering Jack Jack's powers in the sequel, "Incredibles 2".
Mozart is one of the most famous composers in history. He lived in the late 1700's and composed over 800 pieces during his short 35 year life. You've likely heard some of his work before in movies or television or even some music today that references his melodies.

"Jack Jack Attack" shows you what was happening to cause the alarm in the babysitter's voice on the phone messages. You must watch it before the second movie! It's short but fun, plus very informative to showcase the baby's powers.. 🤔👍

Pretty sure the teacher calling Dash a rat was a small nod to the fact that the voice actor is the same guy who voiced Linguini in the Disney movie Ratatouille (a movie set in France all about cooking). If you havent seen the movie, it might be a reference because the main character is a rat.
