Italian Vegetable Soup (Slow Cooker)
1 tablespoon minced garlic
1 diced onion (optional, I left this out for family preference)
2 cups shredded carrots
1 cup chopped zuchini
1 28 ounce can diced tomatoes
1 15 ounce can crushed tomatoes
1 tablespoon italian seasoning
2-4 cups vegetable broth (enough to make a soup, you can add more as the noodles cook)
4 cups cooked white beans (I used Navy)
1/2 pound pasta of choice
Salt and pepper, to taste
1. Cook the beans on high, making sure they have enough water. Drain once soft and cooked through.
2. To the beans, add the vegetables, tomatoes, italian seasoning and vegetable broth.
3. Around 30 minutes before you want to eat, add the noodles to the pot. Add more broth if needed as the noodles cook. Once cooked through, serve with shredded cheese.
What I love most about this recipe is the ability to add whatever you want. A mix of different beans would work just great. And adding more vegetables would only make this better. Potatoes, green beans, spinach, or even pumpkin/squash would be delicious. Add as little or as much as you want. Add a pound or two of ground beef or even meatballs to round it out into a full meal.
Lasagna
1 pound ground beef
1 onion, chopped (optional)
1 tablespoon garlic, minced
2 15 ounce cans tomato sauce
1 15 ounce can whole tomatoes
can replace both canned tomato products with homemade, or 2 jars storebought marinara sauce
2 tablespoons italian seasoning
Salt and pepper, to taste
Homemade or store bought lasagna noodles (I do not precook them)
Sliced mozzarella cheese
1 24 ounce container ricotta or cottage cheese (I use both)
1. Preheat oven to 400 degrees
2. Brown ground beef with onion and minced garlic. Add tomato sauce, whole tomatoes (or the replacements) and italian seasoning. Allow to simmer for at least an hour.
3. Grease a 9x13 dish and layer the lasagna as follows: tomato meat sauce, mozzarella slices, cottage cheese, noodles. About 3 layers and end with a layer of sauce and sliced mozzarella on top.
4. Bake at 400 degrees until browned on top, I like mine pretty brown. About 30-45 minutes.
Caramel Sauce
1 cup brown sugar
1/2 cup cream
1/4 cup butter
1 tablespoon vanilla
Pinch of salt
Chopped pecans (optional)
1. Combine brown sugar, cream and butter into a boiler and bring to a slow boil. Cook for a few minutes (2-3), stirring.
2. Remove from heat and add in salt, vanilla and pecans if you choose.
Whip Cream
1 cup cream
1/4 cup sugar
1. Whip the cream until it has soft peaks.
2. Add in sugar and continue to whip until stiff peaks form. Do not overbeat.
I use a whisk (by hand or on immersion) for small amounts or a stand mixer for large.

Cinnamon or cinnamon stick (optional)
1. Layer a cup as follows: Caramel sauce coating on inside of cup, ice cream, apple cider, fried apples, whip cream, caramel sauce drizzle, cinnamon on top or cinnamon stick on side.
