i'm guessing it's a preferment being added for extra flavor, with most of the dough having a short ferment. like how biga or poolish preferment used in the best pizza places.

It's not the hardest thing to make. I've been making these for years, just with cinnamon rolls filling.. If you can bake a bread, you can make this! 👍😊

It's a very nice restaurant. I went in to try this babka and it was fresh and tasty and the staff were very kind.
