    I already like cabbage, and I was expecting to like this recipe. I wasn't expecting it to be one of the most delicious things that I've ever eaten. This was AMAZING. I sprinkled mine with paprika, and then I topped it with crumbled tempeh cooked w/ onion powder, garlic powder, chili powder, pinch of cumin, black pepper, more paprika, and a splash of soy sauce, and drizzled it all with a sauce made of sour cream thinned with lemon juice.

    I use garlic powder(or diced garlic) and red pepper flakes. Heat to 450 and roast 15 min turn over and 15 min more. Absolutely delicious

    Just made this and it was INCREDIBLY DELICIOUS and filling. Also, the fennel was a brilliant touch, it's true that it really complements the cabbage flavor!

      +heghineh just small. You can actually do it with any size. Cabbage gets really sweet when roasted.

      Thin slices would cook quicker and end up crispier if left in the oven for the same time, thicker slices would be the opposite.

    wow I had never seen roasted cabbage before. here in Nicaragua we eat it in salads and in beef and chicken soup. can we eat it with roasted chicken?

    Well yeah .. I cut the bottom then wash it really good.. And check for bugs or sand grains.. Usually it's clean but I guess it's all in my head.

      That's how we do it if we have bacon fat leftover. I like to rub the cabbage in the little pieces of bacon crust that's leftover in the pan and get the bacon grease all over the cabbage. My god, if you like cabbage you must do it.

    Oh boy. A shitload of oil and salt. And I can hear it now: for extra flavor use bacon fat, more salt, and a teaspoon ful of sugar on each one.

      No, never add sugar. The point of something like this is it's low calorie, chocked full of vital nutrients & plant compounds that help regulate countless functions of detoxification in the body, and a GREAT delivery system for nutritive fats! (Besides, cabbage transforms as you cook/bake it & a natural sweetness comes out.) You can live on zero carbohydrates, but your body cannot function without specific fatty acids to utilize directly or create essential lipids in the body. You cannot make cholesterol--a key ingredient in the membrane of every single cell in your body, as well as every hormone, from thyroid hormone to estrogen to cortisol--without sufficient nutritive fats.
      And, for the record, saturated fat is heart protective and poly-unsaturated fats cause massive cardiovascular damage as they are unstable and prone to "free radical damage." _That_ is what the actual science has always shown. You've bought into the Big Lie Ansel Keys sold to the American Heart Association back in the 50s, despite the fact that his own research proved the opposite of his claims. And we've been a grain-based, high carbohydrate, low fat society ever since, with ever increasing rates of CV disease, heart disease, insulin resistance and metabolic disorder, diabetes & complications, MIs/heart attacks, celiac disease & other digestive disorders, cancers, and a host of other diseases that were rare unicorns before that dietary shift.
      As far as this recipe goes, that's a smidgen of oil or fats. To break it down, that's 4T of oil for 6 servings. A good rule of thumb is to make sure you have no less than 1T of nutritive fats per serving of food, and mix them up throughout the day so you get the full spectrum, not just extra virgin olive oil and nothing else. (That would be like eating 1 vegetable all the time and expecting to get all the vital nutrients. There's nothing in nature that can provide that. Eat ALL the vegetables!) So use good saturated compounds like pastured/grass-fed butter or ghee, coconut or palm oil, and mono-unsaturated powerhouses like olive, sesame, avocado, etc.
      Before you demonize fats again, consider doing some open-minded research. You've been sold lies and whole-heartedly bought into them & repeated them! Fat is vital to life. Carbohydrates are not. (And for the love of whirrled peas, STOP COUNTING CALORIES! Count nutrients instead if you feel the need to play The Count. Okay, old Sesame Street pun.)

      Ross is correct. Oil oil is NOT for cooking at high temps. Instead cook with an oil that is good for high heat like Avocado Oil or Coconut Oil. Save the Olive oil for salad dressings or drizzling over food.

      I grow cabbage, and really, there's no way for dirt to get into the inner leaves. The head of cabbage you see at the store has been stripped of many, many huge leaves and the big stalk from which they grew. The center head is just a small part of the entire plant and never touches dirt.
