The generic overworld fight music is a Waltz for a reason. (Except for the opening, where it randomly drops from 6/4 to 5/4 for a few measures. That makes sense; you just got jumped, you haven't got into the rhythm yet.)
It's eScape, the Omega theme from XIV (which did get mashed up with the Alexander theme for Long Fall.) It's also got a bit of Order Undeciphered, from Azys Lla.

Correct me if I am wrong but can’t you just use the arete stone at the hideaway to replay stages and fight previous bosses?

This fight is why I'm glad Omega is suppressed by a Tab Targeting combat system in FFXIV.
