Love the content and Kudos to Mark to pronounce all the difficult Chinese words. Just one thing - the province Shaanxi is similar to Shanxi (two different provinces). For the one Xi'an is in, you place a third tone on Shaan. Otherwise it's a different province, with the first tone (which Mark used). It just so happens that there's another province name that is only different by the tone on the first syllable. You should totally go visit the other province, too.
Hi Mark that chicken looks fabulous. I love the food variety they have, the noodles and dumplings look so delicious and chillies are a staple in their diet.
I love most food in China, and the cuisine is so different in each province, and as like noodles and dumplings a lot, Shaanxi is great. However, my favorite is Sichuan. So I hope that you will also go there Mark.
I kinda want him to skip Sichuan and hit Hunan, just to see if he can take Hunan spicy since Sichuan spicy is technically less spicy than Hunan when it comes to chilli spicy.

As I was born and grew up from that province, I suggest you visit Baoji City, which is west to Xi’an. Yanyangtian is my favorite local restaurant serving hundreds of authentic local dishes.

Yes, Chang An is the capital of China in the Tang Dynasty. When you see young ladies wearing low neckline, flowing high-waisted Hanfu in Xi'an, it is in the style of the Tang Dynasty.

I live in Scandinavia, where there have been Chinese restaurants since the 1940s. Everyone in my country, Sweden, has grown up with Chinese food. However, most Chinese restaurants in the West have very similar menus which don't reflect the wide diversity of Chinese cuisine. I hope this will change in the future as all of China has amazing food. Just like Italian food is much more than pizza and pasta and Swedish food goes beyond Swedish meatballs, Chinese food is much more than what people in many other countries know as 'Chinese food'. We should all be proud of our own cultural heritage and we should also be willing to get to know the cultures of other nations.
This dish is considered a mix of staple food and vegetables in the central plains of China, including Henan, Shandong, northern Anhui and northern Jiangsu. You need to add a lot of garlic water or sesame oil when served, otherwise it's too dry.

A young American coiuple were touring through China and went to a Chinese Restaurant and order Chicken Vegetable Hot Pot with Fried Rice. Chinese waiter brings a large pot to the table and told the couple that the Fried Rice was not done cooking yet. Then the young lady noticed two small eyes looking at her through the lid on the pot ! She called the waiter back over and asked why was there 2 beady eyes looking at her from within the Pot ! Waiter said, '' So Sorry, I bring you Peking Duck by mistake ! So sorry ! '' LOL
this fry chicken is not just fry, it cooked by first boiling, then steaming then fry, that’s why it’s so special.
