I watched every post you’ve made in the last two years as I recover from a Tracheostomy..and consequently cannot speak anymore..(Throat cancer) you have helped me keep my mind occupied instead of dwelling on my depression..😊

The trick to making corn tortilla enchiladas is you have to fry the “shells” a little in vegetable oil almost firm like a tostada but not as hard fried so they sorta bend and roll with the cheesy meat filling without splitting or coming apart/disintegrating
@@LTsAdventure my mother taught me this way but I have a thing for clean hands and this technique is a sure fire way to end up with slippery red sauce + cheese stuck to the fingers

Always good to see you posting Brian! :) We are still waiting for the van engine rebuild to be finished, it's just been a slow process. Hopefully this week we will have a fully functioning van again. Crossing my fingers those guys do a good job. Its starting to heat up, and soon will be hot for the next 5 months. Gonna be a hot build, well it was a hot tear down, so I should be used to it.
Great job with cooking in the D.O. I've been cooking in D.O. for a long time. For a wind block I use a piece of aluminum flashing. Crimp the edges over so it doesn't slice up your hands. It wraps tightly around the pan protects the coals and holds the heat on and under the pan so you get every btu possible. When done it rolls up neatly a takes up very little space. I've compiled a large selection of D.O. recipes, if your ever looking for new meals let me know. 😊 ☮

Wow, glad to see at one time things were build to last. The ceiling of that bridge was amazing!!!!! If you don't have you should get a strong metal spatula and spoon for the cast iron. Enjoy the moment!

Loved the train tunnel although it looked a little sharp or a turn there for a train to go through but then again it is an old tunnel. My husband when he was alive, loved cooking in Dutch ovens. He was pretty awesome but one thing he never tried; Enchilada’s! Enjoy and love the videos. Keep ‘em coming!

Hi friends! So…traditionally, the corn tortillas are shallow fried in a small amount of oil and then the meat and cheese or whatever and roll up. I’m thinking that could be what your mom does? That train tunnel is cool. Here in Texas we have Old Tunnel State Park. We can’t go in the tunnel like y’all did. Because Old Tunnel is home to up to 3 million Mexican free-tailed bats and 3,000 cave myotis bats from May through October. The bats are protected species.
What a day! Exploring historic sites on motos and back to camp for awesome Enchiladas. I used your method this eve and they were great. Btw, I noticed those bananas over-ripening in the background. I keep ‘em in ziplocks and out of direct sunlight. They last twice as long.
