Defensive Duellist paired with a shield is delightful. I made a Dex fighter a couple weeks ago with Defensive Duellist and the Dueling fighting style. And oops! At level 1, she can do 1d8+5 with a rapier.
I think certain feats will just keep getting recommended over and over regardless of the class. i think most good feats enhance a playstyle/role instead of a class. here's my own top 5 for clerics: 1. fey/shadowtouched- round out an odd wis and gain access to spells most clerics don't have access to. 2. telekinetic- i find this superior to spiritual weapon when combined with spirit guardians as you can just trigger the SG dmg by shoving them into the area. 3. metamagic adept- metamagic is always good. aside from the usual quickened spell, for the death cleric i particularly like distant spell for a ranged inflict wounds modified by touch of death. 4. warcaster- helps concentration and nice to combo with command: flee. 5. alert- just like with any class or build this is a good feat. going 1st is combat is always good.
I don’t think Warcaster is over done on a cleric, I think it’s THE feat for clerics. Cast with hands full is great, as a Cleric you are concentrating at L1 and dishing an inflict wounds is great if you get a reaction spell. Fey Touched is also amazing if you have an odd wisdom score (add misty step and bless to your cleric list and have them prepared without having to prepare them - yes please at any level, if you play a domain that has bless maybe go into hex, bane, hunters mark or comprehend languages with your build). I think it’s hard to highlight racial feats as a ‘best of class’ feat guide since now you need to be playing a Halfling or Dwarf in addition to being a Cleric, but bountiful luck and dwarves fortitude are great (I love to put up Spirit Guardians, dodge with main action and still get a Spiritual Weapon attack, adding hit dice recovery option to that makes it even more tanky.) My build guide would be Start Custom Lineage with Fey Touched to begin with an 18 Wisdom (assuming standard array or point buy creation method - base 15, add 2 then +1 from feat), make sure you have strength for whatever armor you are going to end up in and try to have a 13 or 15 CON, dump DEX, INT and CHA if necessary or round them all lower depending on what you want character wise. L4 ASI to WIS 20, L8 War Caster, L 12 Resilient Constitution. Achievable in most book based campaign and you will feel strong at every level of play.
I like your ideas! And it's true that it's tough to say a racial feat is a 'best' feat to take, but I try to highlight them when they sound cool enough with a class to actually make me want to play that race. I wrote an article that rates each feat by several judging points and I often rated a racial feat highly if it gravitated me toward playing that race just to play with that feat. War Caster is a good feat. Maybe I'm a hipster who likes to mix things up :P
There’s nothing wrong with being a hipster, I also get bored with the same build ideas. I like thinking outside the box when it comes to feats and classes.

Healer feat is great for even more healing when you are out of spell slots. That’s what I did as a human variant

You're right, many of the best feats are great on any class.
