I got here in Istanbul last week and can’t believe it how much food varieties Turkey has and tbh I’m intimidated. Ok guys I have to share this, I didn’t know that Refika is famous in Turkey as a chef, I was grocery shopping at some supermarket and saw Refika’s picture on a dairy product and me being a fan, I screamed OMG OMG it’s Refika!!! Then I said she’s my favorite chef and didn’t know that she’s more than a RUclips chef. It was funny the guy at the shop didn’t understand what I was saying but could see my funny reaction and laughed. But yeah this city is full of happiness and Turkish people are very hospitable and amazing. I’m so grateful to be here and live here for the next 3 months y’all

I love the sound of your knife cutting through all the layers of dough! It has been too hot and humid here (MA, USA) to use the oven, but I have been using a lot of tahini. My "invention" - boil ramen noodles for three minutes then add hot noodles to a mixture of 1 tablespoon tahini, 1 Tablespoon sugar, and put in refrigerator til very cold - even almost frozen. This has kept me going in the heat wave. Already on a second jar of tahini! Love to Refika and the entire team :)
I have made baklava forever. I REALLY love your cutting technique to make rolling the cigars so much easier. I would even be applicable to rolling wraps (which are really big in the US) which I usually find too doughy. Also the mid-cook cut to add other bits and pieces. Oh, and using the tahini instead of the butter! I imagine it tastes like halva. I really want to come to Turkey. Your group is so joyful and it looks beautiful. And, of course, the flavors!

Pekmez and tahini is a known combination here by old people that lived in the 30s 40s these were the old real recipes that were inherited by the Turks in my homeland Bulgaria that was enjoyed with baked pumpkin and molasses was enjoyed in something similar to polenta we call kaçamak which we took from Turkey I guess
