Orange sorbet recipe - Dominique Ludwig Nutrition

  • Wow….today I excelled in sorbet making and this recipe was literally incredible and utterly delicious.
    It has just a handful of ingredients and is made in five minutes. The egg white might sound a little unusual, but it adds a creaminess to the sorbet and gives it a creamy, light texture.
    This is a fabulous recipe for children, and also a really light dessert. You can top it with raspberries too. .
    Recipe
    4 large oranges, peeled and chopped. Around 5-600g of flesh weight
    Zest of 1 orange
    1 lemon, peeled and chopped
    4 balls stem ginger with 1 tablespoon on the syrup ( optional but delicious)
    1 egg white
    Method
    1. Zest 1 or 2 of the oranges and retain.
    2. Chop the oranges and the lemon into pieces and freeze for around 4- hours, or overnight.

    Then…the next day
    1. Take the frozen fruit out the freezer and leave for 15 minutes so that it comes away from the container easily. Also please make sure your food processor has a strong enough motor!
    2. Add to the food processor with the zest and the ginger, and process or pulse until the fruit softens and forms a creamy texture using the s-blade or a liquidiser. Don’t over-process or it will become warm. If it gets too runny, pop it back in the freezer again for a while.
    Next, either serve it at this point, it’s still delicious. Otherwise…
    3. Add an egg white and either use a hand whisk or your food processor and whisk for around one minute to incorporate some air and allow the egg white to give the sorbet a creamy texture.
    Tip….You can actually do this with any frozen fruit.
    Another option is to add some frozen banana for creaminess.

    Why are you calling an ice cream if it doesn't have any milk or cream on it? Calling it sorbet is correct. Calling it ice cream is not, and you should know that.
