khop khun mak krab for this video. At 7:36 why is it not "yang rai", but "yang ngai"? What is "ngai" there?

Good question! yàang rai and yang ngai have the same meaning. To be formal, you will use yàang rai but the informal way, you should use yang ngai. So for shopping or asking for discount we should be friendly and use the word yang ngai.
