I am thoroughly surprised and amazed about how AMAZING these noodles came out. I used bottled lemon juice instead (3 tbsp) and the results were still fantastic. Paired mine with a scampi sauce. Ive been able to find them at any Asian Market. They also soften in fat. I added the noodles right out of the package to a Thai Curry dish and also a pasta Alfredo dish and they softened on their own. My guess is the fat from the heavy cream in yhe Alfredo sauce and the fat in the coconut milk and peanut butter that was in my thai curry. They were delish! Thanks for the video!! I want to soften them for Ramen ❤
I use kelp noodles for ramen. I buy the ramen broth by ocean halo, and i usually boil them in the ramen broth after rinsing them. I want to try your method for my other favorite Asian, especially Korean dishes such as japchae and cold noodles. Your method looks optimal for those recipes. Thanks for the video.

I will still do the washing steps when freshly purchased but will continue to add to my favorite sauces or stir fry’s to bubble with at last minute for serving didnot get slimy at all maybe not cook along with sauces just add at last minute to your juices or gravies and come out perfect.... a life saver for since I’m on low or no carb diet but love pasta

When you are cooking them put them in at the last minute. They don't need to cook. They can get too soft. Thanks for sharing. I hope it goes well for you!

Ohhh my goodness I added kelp noodles to my stir fry juice at the last minute just to warm them up from the refrigerator tossed them with my meat and veggie mix and was not mushy no crunchiness soooo soft

Hello, Thank you for your comment. I would not use konjac pasta because it turns to glue in the digestive system, which is not good for reproductive issues. You can use zucchini noodles. I know that does not feel like eating real pasta but it is an option. I wish you well on your healing journey.

Once you rinse the lemon mixture from the noodles, can you leave them in a bowl for the day until you're ready to eat? Or better yet, can you prepare your recipe in the morning, but not eat until dinner time? Just wondering if the noodle will get slimy if they sit for the day?
If you only rinse with water they will remain crunchy. Try the method Chelsea suggests here and you will see that the texture will be much less crunchy, and more enjoyable🙂
I do not know. But I think the combination of the baking soda and lemon is what breaks down the noodles to make them soft. You can try it to see what happens.
Lemon juice of 1 lemon 1 teaspoon baking soda mixture soak noodles about a minute. Rinse off and ready to use.

At least for 15 to 20 minutes. I left it in 30 minutes once,,,it got mushy like when you overcook pasta.

I have noticed before that Marinara sauce will soften them too, because it's acidic, but this is perfect!

Same I threw the hole bag away! I was done! But now, I'm headed to MOMs to get another back and dry these out.

If i remember they were similar to rice noodles in asian dishes. As long as you follow the instructions of the video they come out nice texture

The noodles will it taste sour. The lemon and baking soda only soften the noodles. When you rinse the noodles the lemon and baking soda go away.
Have you tried that process with Konjac Noodles?

It doesn't taste good crunchy in my opinion. The lemon baking soda mix softens them up. I ate them crunchy in the past and I didn't like them.

I would assume the lemon is necessary as it is an acid. I would think White vinegar would work as well.
