fun fact: the leggings of the tide guardian set are slightly stronger defensively(not durability wise but its still pretty good) than the dragon scale leggings. so running a mixed set is actually a good way to optimize and you get strength when wet and permanent water breathing meaning rain makes you do more damage.
I think you got the amphithere wrong. They are not aggressive towards players unless you hurt them, and they are actually pretty timid when it comes to players. You dont feed them raw meat to tame them, you just have to mount it, and survive its attacks long enough. Thats why, when you mounted it, it started attacking you with its beak.
Stage 3 dragons can easly be defeated with just a bow and water bucket,just dig straight down at least 5 blocks and little bit to the side so you can avoid the breath attack when they do it, they can rareley actualy dig towards you

The Gorgans are actually super easy to kill. Just look at the ground like you are trying to avoid an Enderman and keep hitting her.
