Hot or honey mustard would be my favorite dip for onion rings!
I really like to mix a combination of mayo (the real stuff), a minced chipotle pepper in adobo sauce and some spicy chilli crisp. Adjust amounts to your heat preference. It is a bit from a few different cultures but delish.
That actually sounds pretty good. Gonna have to try that! I too am a part of the Real Mayo Club.
If the onion ring is good enough I don't need a sauce, myself. But I enjoy honey the most.

Beef tallow is my choice, seed oils are horrible for you.
