  • Comtec 1100 is a very versatile and multi-use crust forming Press.
    Forms perfect crusts for pies, pot pies, tarts, hors d'oeuvres, cheesecakes, quiche, top crusts for covered fruit pies in most round pans 2.54cm through to 30.48cm in diameter, plus many other specialty items. Specialty crumb crusts that cannot be rolled or sheeted are easily formed.
    Available Rim Styles: Plain, Gear, Spider, Daisy Petal and Rimless
    Consistently makes crust exactly to size, leaving no scrap dough. No sheeter, rolling pin or hand forming dough. No dusting flour is used, no special skill or strength required, no special formula.
    One person of any skill level can form up to 500 perfect crusts per hour. Anyone can learn to operate the Press in a few minutes. The simple operating procedure requires little effort and minimises operator fatigue.

    The finished crust is superior to one that has been rolled. Rolled crusts have stresses and grains from too much handling. Crusts formed on a Comtec Press are flaky and tender.

    Forming dies are available in almost any pan style and size between 2.54-30.48cm diameter, and are interchangeable on the Press. The solid aluminium dies can be cleaned in water. The die heating system is part of the Press, not the die.
    Forming dies are custom made of solid food grade aluminium to your desired specifications.
    Special dies can be manufactured to fit pans used for specialty items.

    We have one at work and it is hard to form crust with it. The problem is it heats the dough and melts the butter in the recipe. What temperature on the thermostat should it be set? I set it less than low. Also how much dough should be used for a 9 inch pan? You assistance is greatly appreciated.

      Really, designed to be used with lard or moreso Crisco shortening. Butter has a low melting point so I would say stay away from using it that way.
