This is such a wonderful recipe! I've made it over the years, sometimes substituting zucchini, and sometimes mixing both yellow squash and zucchini for some color. Thank you, Paula for doing your Thanksgiving video's🦃 sequentially. Makes it easier to find again. And, thank you for the shrimp n grits recipe! I was asking for that a very long time! I make a similar squash casserole, but I use a can of cream of chicken soup instead of the cheese and top it with some Pepperidge Farm cornbread stuffing mix. I also put a layer of cornbread stuffing mix on the bottom with some melted butter. Sooo delicious! 😋😋😋

I am from Georgia and lived in Albany for a while. I wish Paula would make squash patties.
Squash and onions boiled together, 1 egg, flour, bit of meal and milk. Gets it to pancake batter consistency fried in a pan with a little bit of oil. DELISH!

🚨🚨MRS. PAULA!!! I will be making this dish with one change that I think even you might like! I have started using crushed pork rinds as bread crumbs for EVERYTHING. It’s “out of this world!” and beyond. I used regular flavor pork rinds and crush them in the ninja blender. For this recipe I wouldn’t even douse them in butter (you could) but they don’t need it. They’re fat filled already and will crisp deliciously. Please try it! I would like to request you do a green bean casserole holiday recipe. My little 4 yr old girl, Wolfie and I enjoy the hoot out of your videos! Love from Dallas TX!

This looks delicious! My family always has squash casserole for Thanksgiving dinner, but we’ve modified it to use butternut squash instead of summer squash and no cheese. We use buttered Pepperidge Farms stuffing crumbs for the topping. It’s so good!

My family always expect to see Squash Casserole and a Green Bean Casserole sitting on the counter for the holiday get togethers. Your Squash Casserole looks so much easier to make and I like easy.
About the onions… When you cook the onions separately in a pan with butter the larger sugar in the onion will break down into smaller sugar molecules producing a sweeter taste. When this process is skipped the onions aren’t as sweet in the casserole. So there you have it!
Also , (1) tsp of baking soda will encourage faster caramelizing...per America Test Kitchen. Add to ground meats too...huge difference.
Sure, the onion flavor would dilute if “steamed”(?) with the squash...
@@laineciccotti9748 It is important to note that caramelizing onions goes a step further than merely sauteing or browning the onions.
Caramelizing onions is a low-slow process. Low heat, slow time. It usually takes between 40-60 minutes and frequent stirring to caramelize onions properly. Ingredients are typically onions, butter, olive oil, salt, and some recipes call for sugar, balsamic vinegar. I like Bon Appetit's recipe, but there are plenty of recipes online.
You have to keep a close watch and stir frequently. Properly caramelized onions have a "jammy" texture.
The good news is that caramelized onions can be made ahead of time, and refrigerated or frozen until ready to use.
I have seen recipes for caramelizing onions in a slow cooker, but I have never tried that.

Lol Theresa - I think I got a social degree, too! 😉 I love a good squash casserole. Yum! It makes sense that the onion be sautéed alone - that way the excess water from the squash doesn’t water down the onion flavor.

How good it is to know that we need to sauté the onions separately! Sometimes, my casserole has a sort of a whang and I bet that’s the onion not being sautéed separately! Some onions are stronger than others. Thanks for this important tip!
I wonder how caramelized onions would work as a variation. Since you have to sauté the onions separately anyway, taking that step up a notch to caramelizing might add an interesting richness.
Earlier this year, one of the comments here pointed out the danger of non-stick spray ending up on the floor and causing a slip or fall. After reading that, I've been spraying it into a folded paper towel held over the sink, and then wiping the baking dish with the oiled paper towel instead of spraying the dish itself. In addition to being much safer, you end up using a lot less of the spray itself. It really doesn't take much spray to get the job done.
If you spray the dishes over the counter and not the floor you should be fine ma’am. 🙂
@@ckrtom2 The oil can still get on the floor, even if you're spraying at the counter. I thought the person who originally warned us about this risk did us a big favor.

I made this but added 2 eggs scrambled and 1/2 cup mayo and 1/2 cup sourcream. Mixed eggs with mayo and sc I also added green bell pepper to the onions and cooked that together. Added diced ham and it made a good entree with the addition of the ham.
How much sour cream? I like these videos but I wish the amounts of ingredients were listed

I hope you can fit this in before thanksgiving, I always make a broccoli casserole for Thanksgiving & Christmas, but have never really had a recipe, I’m sure your recipe is delicious and I would love to try it this year.
Also, I would like to to thank you once again for all that you have shared with us (recipes, your home, family, friends and a little bit of happiness & joy when a lot of us needed that) over this time of quarantine. I have loved these videos from the start and have continued watching daily and grown to depend on them day to day for inspiration to make new meals for my family.

Miss Paula, one time when I was about 17 years old I wanted a squash casserole so bad , so I thought I'm gonna make me one. Ya'll... I forgot to boil the squash 1st . HAHAHA....!! 🤣🤣🤣😁🤪😜 Needless to say, I learned my lesson since then . By George I'll never make that mistake again. She should better explain the cooking of the squash (and call out that it’s what’s commonly called YELLOW squash in the store). I guess she just steamed the mandolin-sliced pieces in their own juices until mushy-ish and then drains?...

I was wondering the same thing! Looked like sour cream.
I cook alot and im still using the same paula pans and pots ( the red ones) I bought at K-mart about 10 yrs or more. I take good care of them. Only reason to buy any new ones is to change up the color scheme. I love her brand of pots and pans.

I am writing a research paper on three Southern women, and have chosen Ms. Paula Deen as one of my Southern Women to research. I love your videos and they have helped me so much. Until recently I had no idea really how special of a lady you are to the Southern Cooking community. You have helped me see food in a whole new, wonderful way, and you remind me of my grandmothers. Thank You for doing these videos. I am so excited to try some of these recipes (maybe all of them ;)). By the way, if you would like to help me portray you more accurately in my paper, I would love to do an interview with you. ;) ;)
Paul I do a chicken and squash casserole that is out of this world.
Boil or roast your chicken let it cool
and cut up in to pieces
Then cream of mushroom soup
cream of chicken soup and sour cream mix it all together
Spray a 9/13 baking dish
Sprinkle the bottom with half a package of pepperidge farm dress
Then your chicken mixture and then the other half of your stuffing melt butter and pour over top and bake at 350 for 45 minutes or until bubble and brown.

I just made this casserole for lunch today. It was delicious! Thank you for sharing the recipe.
I like to add half mayo and half sour cream, some chicken stuffing mix and to make it really good, some chopped water chestnuts (gives it a little crunch). Usually I mix yellow squash and zucchini together. I like this dish because you can make a small amount or a big casserole for a crowd. You don't really need a recipe--if you know what to put in it, the amounts are flexible. As long as you get the water out of the squash, It always turns out delicious!

It was nice to have a quarantine or quaraDeen time with you but it's time to heal and move on and I agree changing name. We love these videos I watch with my daughter everyday. I learned to cook from my great grandma and grandma. But my mom isn't much of a cooker lol I was fortunate enough to live beside both my great grandma and grandma so they cooked for all of us so no real need for her to cook. She can but anyway Alex told me she feels like she in the kitchen with MamMaw again so thank you for that Paula. I'd love for you to show us how to make the turkey, with dressing/stuffing inside!
She talks about that when she shows how to make Southern dressing. She said she doesn't put stuffing in the turkey anymore, because it doesn't get hot enough in the inside turkey to cook it without the possibility of it being under done.
