- OLD SCHOOL CHEESE SAUCE
This is a perfect easy recipe for your mac and cheese,potatoes,broccoli and anything that u enjoy with cheese sauce
So much better than store bought cheese sauce
You can add or subtract and cheeses u like
FOR CHEESE SAUCE:
1 quart of milk
1 cup cream cheese
1 cup Velveeta cheese
1 cup jack cheese
2 cup mild cheddar cheese
1/2 -1 cup old school roux( melted butter/flour)
Heat milk in pot until boiling
Add roux to milk and incorporate completely until thickened
Turn down the heat to low temp
Add cheeses to thickened milk one at a time
mix until complexly smooth
Turn off heat and
Season with salt and pepper

This is a very interesting take on a bechamel sauce. I was always taught you build the roux first in the pot with butter and flour, then add the milk and then cheese. This is a very interesting take on it and I can’t wait to try it tonight!!!

So..., I finally got around to making this cheese sauce and macaroni and cheese dish a couple of weeks ago and it was E-V-E-R-Y-T-H-I-N-G !!!!! I shared some with a family member and it's still being raved about. Thank you, Chef!

Velveeta has additional emulsifiers and stuff in it that will also help keep your sauce from splitting and keep it stable. I don't like it myself, but I'm picky about cheeses, so that's not saying much. I'm a BIG fan of mascarpone in cheese sauces when I can get it. Regular cream cheese is good too. I have recently started replacing about a third of the milk with evaporated milk as well. That also seems to help keep the sauce from splitting or solidifying as it cools.
YES, mascarpone!! And I LOVE fontina, smoked gouda, Asiago - aww man, I'm getting hungry!!
Evaporated milk or half-n-half to replace whole milk. Velvetta? NO SIR!
I was thinking the same thing! I use mascarpone also because the flavor is more neutral than cream cheese and it blends easier.
