Ingredients
200g (about 7 oz) Wagyu sirloin (trimmed of fat and portioned to match the bread's shape)
50g (about 1.75 oz) flour
2 eggs, beaten
100g (about 3.5 oz) panko bread crumbs
30g (about 1 oz) tonkatsu sauce
50g (about 1.75 oz) thin sliced sugar loaf cabbage
2 slices milk bread (from a tin loaf)
Wagyu tallow, for frying
Method
1. Season the trimmed Wagyu sirloin with salt, then dust in seasoned flour, dip in beaten eggs, and finally, coat evenly with Panko bread crumbs.
2. Heat the Wagyu tallow in a fryer or deep pan to 180°C (356°F). Fry the breaded beef for 3-4 minutes or until golden brown and crispy. Immediately season with flaky salt upon removal from the fryer. Let it rest for 5 minutes.
3. Lightly brush one side of the milk bread slices with tallow, then toast them on one side only.
4. Spread tonkatsu sauce on the toasted sides of both bread slices.
5. Place the beef cutlet on one slice of the bread, then add the thinly sliced cabbage on top of the beef. Cover with the second slice of bread, toasted side facing inward.
6. Trim all four edges of the sandwich for a neat appearance, then cut the sandwich in half, and each half into two again, resulting in four quarters.

I've always just wet my hand and flicked it towards the hot oil maybe not as sanitary but that's what the hot oil is for

I am so surprised when the bread to katsu ratio is perfect. One of the pros of cooking the food personally and not like when I get it from a restaurant and there is hardly 40% katsu in there.

It’s also the best for French toasts, the crumb of the bread allows the toast to get really nice and crispy unlike other breads like Texas toast or brioche imo

Not to mention that since historical times, I don't remember when, but if I am not mistaken, I got this from Tasting History, Japanese cuisine has always focused on techniques designed specifically to make food Look good first.
Since we do infact eat with our eyes first, this is a smart strategy.

to be sure the temperature is right with a wooden spoon, the spoon itself would have to be dipped in something (bread crumbs fx) or dirty af! Toast is also a bit too burnt, just saying...

Not sure if this is a thing in other countries but in Australia we make curried egg sandwiches by adding curry powder to the egg and mayo and it’s delicious!!

As a Japanese, there's nothing wrong before making other culture's food, as long as you approach it with humility and the willingness to learn instead of arrogance. Many people learn by failing, so even if he attempted first it still would have been fine. As long as he doesn't just attempt to open a restaurant with 0 experience lol.

Nice sturdy, absorbs the fat, nice crisp up on it. Looks like it digs a lil after the crisp up, but I’ll put it on the extra meat juice and it being katsu. I’d say near the perfect bread for a sandwich. Almost looks like be good for a frenching toast up. Idk the flavour profile, but just from the looks of it looks good.
I love the chopsticks in the fry to check if it's the right temp. Same as wet fingers and a flick over the oil. It spits its ready 👍
