How to Make Vegan Gravy | Hugh Fearnley-Whittingstall

  • There’s nothing nicer when lashings of rich, tasty gravy are poured over your Christmas dinner and River Cottage has a vegan recipe full of hearty flavour.
    Chestnut mushrooms form the back bone of this sauce along with carrot, onion, celery and herbs. And Hugh’s got a secret ingredient to give this gravy a twist. Delicious!
    Hugh uses soy sauce and a sprinkling of flour for this gravy. To make this recipe Gluten Free, use gluten free versions of these ingredients.

    And the veggie mash can be used as a stuffing or adding some flour or chick peas can be turned into a veggie patty.

    James Martin needs to watch this. I asked him once to recommend a vegetarian main for Christmas which didn’t have cheese in because we like to have all the trimmings and gravy. His answer was “you can’t make gravy without meat”! I’ve saved this and it won’t just be for Christmas! 😀

    I love the inclusion of vegan recipes. I'm not vegan myself, but this shows to people that vegan is nothing to be afraid of :)

      Yup, and whether you're vegan or an omnivore, it's a good idea to cut down on the meat consumption at least every now and then. Meat is loaded with saturated fats, which increase the amount of LDL (bad cholesterol) in the body and lead to plaque formation in the arterial walls.
      So give your heart a break and have some veggies once in a while, guys and gals!

      ***** LOL I was being sarcastic. Though my views since then have changed in sense in the sense that I acknowledge that eating more calories than a person needs (even if it's fruit), will make them gain weight, though weight gain caused by fruit could probably only occur by drinking massive smoothies since you can take in much more fruit calories at once that way.

    I made this yesterday for our christmas dinner and it was amazing!! So much flavour and dept :)

    If you want it thicker a little cornstarch will do the trick

    Foodtubers, I love that. I'm going to make this for my vegetarian daughter in law. I'll take a cup out for her, then add the rest to turkey gravy for the rest of us. For those left over vegetables, I'll add them to my "soup freezer bag". I'll collect left overs and build up a bag and on a cold winter day, I'll open a few boxes of name brand broth then add my "soup freezer bag". You can add left over rice (brown, white or wild) or add some cooked Quinoa or barley. When you buy those cooked chicken from the grocery store, keep the bones and in a bag in the freezer and make your own broth. Just water and bones, then when it's done, strain and use the broth to add your veggie bag to, season to taste. Pre cut left over meats and veggies to be soup ready. Add fresh or frozen cut up tomatoes, potatoes, what ever is on hand. Try it, Freezer Soup is always unique and delicious.

    Brilliantly explained and the end result is amazing looking. I'm betting the coffee plays REALLY well with the mushrooms and it must be nice and savory. You'd probably never miss meat gravy if you used this.

    Best veggie gravy on the net - and I've tried quite a few! I've adapted it to local supermarket pack/bag sizes and a double batch. Not really that keen on putting soy sauce in, but it DOES add to the flaour. Others suggest marmite - they can keep it. I want my veggie gravy to be made of veggies, NOT the ICI stock list on the back of UPFs. So I also use this gentleman's homemade stock for the recipe, too. Thanks, HFW, you're a gent and a genius!

    Saute in rapeseed oil
    Chestnut mushrooms
    Chunky sliced onions
    Sliced carrots
    Sprinkle or dust flour
    Add Vegetable stock
    Add celery stalk
    Simmer
    2 TBSP coffee
    Tamari soy sauce to taste
    Mash up veg & add salt
    Strain!

    I do a version of this, but chop the vegetables up finely, and keep leftover in the fridge. gravy + frozen veg + rice = quick healthy dinner

    But more seriously, this looks great, it's just a real shame you threw out all the vegetables. No way I would do that. Toss that gravy (with veg) on some potatoes, and BAM! Coma time.

    I made this last year , it kept the meat eaters happy as well as the vegans . I crankupthe flavour by adding some dried porcinni mushrooms to the hot stock

    Looks good! I might give this a try.. save the veggies though and whiz them in the ninja w/ almond milk and a bit of arrowroot or flour so the gravy is a bit thicker 🤔 Thanks for sharing!!

    Provided I can find all the ingredients in the supermarket tomorrow, I will most certainly be making this gravy for my christmas meal. I don't eat meat myself, so I always make the family a chicken gravy made with chicken wings, if I can spoil them with that, I'm sure I can spoil myself with this!

    Really nice thank you, and I’m not vegan - it will be served with our duck. My mistake was not to add enough water, but there is just about enough gravy for the 2 of us; good job there won’t be more of us on Christmas Day!

    Simple recipe, great flavours. Would you ever add any dried mushrooms for a bigger depth of flavour? Ie. Porcini mushrooms??

    I made this tonight in my quest for a vegetarian gravy that's as tasty as a meat one. Whilst it had a tonne of flavour, it was far too salty and that was without me adding any extra salt with the pepper. I'll play around with the tamari and stock and see how it goes.

    I can definitely tell this gravy has a lot of flavour to it, yum.
    I have vegetarian/vegan food quite often just for the nutritional benefit. But mainly eat meat, so I get the good stuff from both sides!

    Chefs that scower at making vegan dishes are not chefs at all. Once you go vegan, the menu opens up and the true test of chef-e-ness comes out. Nice recipe. Good work.

      Also, nutritional yeast (nooch) works miracles and will be better for a flour substitute.

    This looks good and full of flavor. You have to add some caption or something though, cause right now this recipe is presented as gluten-free (in the "about" box and in the beginning of the video) and it isn't, on account of the flour. I know most people will catch this mistake, but still - you should probably add a caption instructing to use some gluten-free flour (or remove the GF label from the video and "about").

      Vegemite isnt Gluten-Free, unfortunately for people who cant have it. Lucky, I dont have that problem. lol

    so I'm revisiting this for the coming xmas and question: is there a reason you didn't just use some vege items or marmite for both savory flavour and the rich dark colour?

    I'm thinking that pulling out the bay leaf and thyme stems would make this a perfect candidate for blending up. No need to sieve it at all.

    What will happen to the veggies that you left in the sieve? Maybe if you dice them fine you can leave them in the gravy and serve it like that? Any other ideas? I just don't like waste in the kitchen...Otherwise this is a great recipe!

      +evelin ha I seived everything out and removed the bayleaf but put the veggies back in - by seiving somehow it thickened up more
