    ▶Ingredients
    ★Mold size Ø15cm★
    [Black sesame gateau au chocolate]
    50g unsalted butter
    120g white couverture chocolat
    80g fresh cream
    3 egg yolk
    40g sugar
    3 egg whites
    40g sugar
    20g soft flour
    30g black sesame powder
    [Soy flour cream]
    200g heavy cream
    50g roasted bean flour
    20g sugar
    ▶How to make
    1. Melt the fresh cream, butter, and white chocolat in a water bath to prepare.
    2. Add 40g sugar to the egg yolk and mix.
    3. Raise the temperature to about 40°C (104°F) with a water bath, then add foam.
    4. Add the melted white chocolat dough to the yolk dough and mix.
    5. Divide sugar into egg whites 2-3 times and make soft meringue.
    6. Divide the white meringue into the 4. dough and mix.
    7. Bake for 40 minutes in a preheated oven at 160°C (320°F).
    8. Cool the finished black sesame or at room temperature sufficiently.
    9. Place cakes that have cooled down in the refrigerator for at least 4 hours.
    10. Add roasted soy powder and sugar to the heavy cream and whip it.
    11. Take out the cake from the refrigerator and add the cream.
