    So.. as a seven year old reading "The Lion, the witch, and the Wardrobe" , I imagined turkish delight was a turkey stew of sorts. I pictured it warming edmund as he sat in the white witch's sled. Whenever we had turkey I would have a little bowl of it with rice and roux and think of my favorite story of all time. I'm thankful for this, I'm going to make some REAL turkish delight when I'm in my own home again. And should I ever have a child, I shall make this and we will read my favorite story together.

    Thanks for making this video of the traditional recipe. For those in the USA, make sure you use corn starch, not corn flour as corn flour is a different product here.

    Did anyone else think of Mrs. Doubtfire the whole time? Seriously, this was the best thing ever! And I can't wait to try this, I've always been curious about Turkish Delight ever since reading the Narnia books.

      Its highly irresistible, I ate the whole box while a 2hrs drive after buying it, I became a huge fan of it, loved Nutty fruity soury taste specially pomegranate ones, figs, saffron, pistachio etc etc.

    I just made them!!!! The are delightfull! However, I added 8 tbsp of rosewater because we like them rosy!!! Thank you soooo much for this recipe!! Here in Greece we can buy them any time but we are creative people!

    I made these with just the lemon and used saffron for the coloring (I had no food coloring) and they were GREAT. Highly recommend this recipe, 10/10

    My dear Titli! I made these according to your recipe for quite a number of times. They always turned out very good, but they were much more tender than the professionally produced ones. Maybe I set my stove too low, but I don't think it's the case. I now use 140 g of cornflour (20 more than you do) and cook it until it can almost be lifted as a single ball, continuously mixing with a spoon for about 40 minutes. Then, I pour it in a non-stick pan and flatten it with wet hands (it won't run). In this way, it's even better in my opinion. Your final result looks much more liquid than mine, that's why I don't think that the stove is the point. It's also much easier to cut and to deal with, as it will detach from the pan on its own when cold. You can try my advice the next time you make this! Your new buddy :)

    In the UK cornflour and cornstarch are the same thing. In the US corn flour is flour made from ground maize.

    Having moved here with Grandparents (back in the 50s), Gran had the very great pleasure of introducing my new friends to this. THIS sort of thing was "home cooking", to us. My late wife could never get the 'gloooop' quite right, but, still, it sufficed, and American friends loved it. Good recipe, this...tried it myself. DON'T TRY SHORT-CUTS!

    Hello Everybody. i live in Turkey. There are hundreds different kind of turkish delights. my family also have a organic delight factory where they never use chemicals . i can help you and even send for you the most traditional delights and rose water.
    p.s. Did you know that Turkish delight is the origin of Jelly Bean? :)

    oh titli, this an amazing recipe. not a rose fan, so i tweeked with tangerine, lemon orange peels ground with little sugar in a blender, orange colouring and a dash of lime cordial, they, who tasted it, went crazy, amazed at texture and freshness of the final product, you are a star, right now making another one with chopped pistacchios, mastic and neroli lol. thanks now they are begging me for more and more. love you :-)

    Turkish Delight was invented by a confectioner in Istanbul nearly 250 years ago and he called it Lokum. Turkish Delight is the Western name for it.

      technically no
      "corn flour is finely ground maize, and corn starch is a thickener made from refined maize starch" but I think she means corn starch because it looks like corn starch

    Commercial TD contains a number of gums and stabilisers which prevent it sweating. One trick I've read but never tried is to roll the fresh TD pieces in cornstarch and leave on a rack for 30 minutes. This supposedly cures the outer surface of the pieces. Then you can roll in the icing sugar/cornstarch mix. I've never tried it so I can't say if it really works or not! I've not heard of CODINEIGE.

      charles hall A candy thermometer would be the best option, but if you can't afford one then the cheaper alternative of a sugar thermometer will be adequate.

    I made this today with lemon extract instead of rose water, no colouring required. I'm really impressed with the texture - it's like little fluffy clouds of lemony sweetness! They just melt in the mouth and make shop bought seem like stodge by comparison! Amazing, thank you!

    You are correct - in the US it is known as corn starch

    I agree, this is the proper way to make Turkish Delight which depends on boiling a starch in the presence of an acid to produce the correct 'jelly-like' texture. I usually add a few drops of vanilla extract (not essence) to the rosewater to give the flavour a little extra body and lemon zest from really fresh lemons (picked that day) for the lemon flavour TD.
    Nice to see the proper use of a mix of icing sugar and cornstarch for coating the TD and for keeping it from sticking together.

    Made this with my little girl and husband helping out too. It is absolutely gorgeous. The best Turkish Delight we have ever tasted! The texture is sublime. Looks so professional too. We made the rose but are looking forward to trying out other flavours.

    Commercially made Turkish Delight contains a lot more ingredients to give the texture you experienced and prolong its shelf life. They add various gums and stabilisers.

    I LOVE rosewater Turkish Paste ever since I tried some in a medeterranian market/deli in New York. About fell flat on the floor when a not-so-local kitchen supply store actually had rosewater on the shelf. I am studying these videos carefully and I'm going to try making my own!

    Had traditional Turkish delight over 12 years ago in the 5th grade and I still remember the taste. It was right after or class read the Narnia books too. Finally understood why Edmond loved them so much.

    I followed your recipe yesterday and they came out amazing. The mixture was thicker than yours though so I added some water after heating it in a pan. It was still thick at the end idk why, but not as thick. Definitely not runny like yours, why might that be?
    Left it overnight and cut it up the next day and coated it.
    ABSOLUTELY AMAZING! 😍
    Soft, silky and melt in your mouth consistency 🤤

    In Australia we have a turkish delight chocolate bar I think I have had turkish delight like this to love turkish delight.

    Made this TD recipe again today. So delicious! I used one teaspoon vanilla extract instead of rosewater. Rosewater would be my preference but not for the rest of the household. Thank you for the post!!
