  • Looking forward to showing you How to PRE COOK CHICKEN for curries Indian Restaurant style. As you can imagine the Indian restaurant and Takeaway industry is very fast paced, having pre cooked chicken ready is great way to make curries on demand efficiently.
    Pre cooked chicken is lightly flavoured chicken cooked with a mixture of powder and whole spices. It is then used to make a variety of Indian restaurant style curries, for example Chicken Bhuna, madras, korma, Curry, Dansak, Vindaloo and so forth.
    Ingredients needed to Pre Cook Chicken
    800g Chicken Thighs (At the restaurant we mainly use chicken breast)
    3 Chefs Spoon Oil
    1.5 chefs Spoon of ginger and garlic paste
    1.5 tsp Salt (to taste)
    2 Chefs Spoon of Tomato Puree Paste
    2 Bay leaves
    1-2 Cinnamon Stick
    2 tsp Mix curry Powder
    1/5 tsp Coriander Powder
    1/5 tsp Cumin Powder
    1tsp Paprika Powder
    1/5 Garam Masala
    1/5 Turmeric Powder
    Warm water enough to cover chicken

    Love your vids and recipes. I've tried this but I also cooked the stock down then froze it in ice-cube trays. I add a cube to a curry now and again and it adds more depth to the taste. Great recipe. Thanks for sharing.

    Hi there what do you do with the gravy that’s left and do you store the chicken dry or in a bit of gravy thanks

      Great question, I store the chicken with some of the gravy. Sometimes in portion sized containers (like the takeaway one) and I freeze them. The remaining chicken gravy you either blend it to smooth consistency and add to the base gravy (onion base gravy) it will add more flavour however if veterinarian/vegan this won’t be an option to add the chicken stock/gravy.       Hey I would 3-4 days but I can also separate in curry portions and freeze them. When needed just defrost them. Hope this helps and thanks again 😀

      Hey yes you can, freeze with sauce and then add some sauce in to curry as well, enhances the flavours of bir curry. Thanks.

    Can the left over liquid be used for a sauce for a curry?

      Hey great question, you can add some of the left over when your making the curry (1-2tbsp ), when you store the precooked chicken ensure it’s with some of the sauce that way the chicken pieces won’t dry out and keep the flavours . Hope that helps 😀

      @@TheBengaliCook just cooked up Tikka Masala - divided everything in the freezer and used fresh chicken. Tastes even better when it’s left. Going to try the garlic chicken curry - basically madras without the hot spices. Looks sooooo tasty. My local is gonna go out of business now I’ve found your channel lol. Still trying to find Keema meat recipe - when I perfect that it’s game over for takeaways 🤣 thanks for your hard work

    But the restaurants always say they only use chicken breast yet they get the Brest so tenter and moist.
    How is this possible?

      Absolutely your right, we use chicken breast at the restaurant, I usually cook the chicken on high heat for the first 10-15 (depending on quantity) and then leave it on medium to low heat until chicken is cooked. Hope this helps.
