      @Siimland. Super weird comment: if you like adding Balsamic for flavor, consider "condiment grade" balsamic. It actually contains at least 50% and up to 100% grape must, sometimes aged. No health benefits, big culinary potential imo. I love food and cooking. Ethan Chlebowski did a comprehensive video on Balsamic. Great vid and gl with the book!

    Hi Siim, thanks for al the videos you are making about longevity. I try to follow you guideliness for training, diet and supplementintake. Now i'm training for a quart triathlon and i do a lot of endurance training. Should i stick to high protein and low carbs (around 150 grams of carbs a day) or should i increase my carb intake?     Thanks for sharing! Two questions: for the protein powder you count 80% of protein not 100%, don‘t you? Secondly, for the protein synthesis after the training can i take the protein shake bevore the training too or only after the training? P.S. Hope your book will be translated quickly.

    Thank you for sharing the blood analysis.
    Homocysteine is really high. It should be 7-8, this is optimal. Have you been tested for B12? Do you take methionine?
    Apd: Oh, I remember. Perhaps this is due to the amino acid cysteine in the NAC supplement. What do you think?

    some issues as.
    cocoa has lead which you are not taking herbs to help counteract it despite the sauna.
    probiotics do not digest as other say unless you have something special
    plastic blender which dont you have glass?
    non stick pans?
    In general good.

    Good stuff and thanks for sharing. That's pretty clean eating. Are you getting adequate choline? Also, any concerns about oxalates? The sweet potatoes alone will put you at ~525mg in oxalates and that's not even counting the beets and walnuts which are also high oxalate foods. General safe recommendation is to keep oxalates below 250mg per day (e.g. ~10% is absorbed/makes it into the blood and the kidneys can handle ~25mg oxalates per day) and optimally below 100mg. I understand why you have the kefir-like dessert at the end as the calcium in it will help bind a lot of the oxalates. Little known fact is Cronometer actually tracks oxalates but I don't think it's enabled by default. You have to turn it on in the settings.

      Oxalates are only a problem with low calcium intake. I'm getting high calcium. Never had oxalate problems

    Though I have PCOS, all dairy products, milk, yogurt, whey protein powder seem to suit my body completely and I have no issues with them so can I continue to keep dairy in my daily diet?
    Also what about tofu?

    How would you do it if you also ran 50-100km per week on top of 3 times in the gym per week? Eat back the calories you burn with more meals, meaning less fasting or get lets say another 1000 kcals in the same eating window`?

      Environmental concern, desire to completely eliminate certain components found in meat (like saturated fat or contaminants found in a certain geographical area, etc), ethical concerns, low-protein diet due to cancer or kidney disease, don't like meat, concern over red meat a type 2 carcinogen according to WHO, concerns with meat quality/lack of access to meat produced under adequate standards such as food safety, concerns around causing the next pandemic virus by supporting meat production (probably fear of bird flu), just liking the taste of pea protein (yea not me lol), desire to raise fibre intake through literally any means possible, any or all of the above.     Your daily calorie intake is ~2000 cal, with a BMR also at ~2000 cal, and being quite active, you burn an additional >1000 cal every day. Given this significant calorie deficit, how do you manage to build muscle?

      From pea flour you isolate the protein and remove excess fiber which then is made into granules with an extruder

      I am into Immunotherapy and Gerontology research work in Asia for over 17 years.
      I advocate clean whole foods that we can see and know and control before consuming. Favouring IF for awesome Autophagic results, I don't go for supplements in pill form.
      When we deep dive into all these powders and tablets and pills, these are also classified as lightly "processed and refined". We have been checking on and featuring healthy elderly, seniors and centenarians in our studies and they are not into the modern diet and lifestyle.

      We cannot control the production process.

      3 mg is enough for skin benefits which I'm taking. For lipids and blood pressure up to 6-12 g is optimal

    Definitely on the lower end of protein. Food choices seem very lean also. Do you not get any animal fat? No beef? No grass fed butter or dairy?

    Brined olives are superior to EVOO. Higher polyphenols per gram, lower in exogenous AGEs.

      I eat them often, but the oil is probably higher in polyphenols because you've got more olives squeezed per gram

      Agree totally with you.
      I eat 4 different types of olives in brine.
      EVOO can be at least 20% adulterated in most brands.
      I go for organic grass fat ghee.

      Based on our research, dairy has always been a topic of controversy. Some are for but others are against dairy.
      The French Paradox is one that has shed some interesting facts about dairy.
      From my personal perspective, selective sources of dairy like raw unpasteurized butter, cheeses and milk (specifically goat's milk) are nutritionally superior when consumed in moderation.

    Why are you eating veggie based protein? That white fish is not merely enough, and not sure why you rnt consuming more animal meat, where is the ground beef and red meat? For someone who wants to maintain muscle and size, you sure seem to be staying away from real meat.
