Nice test. I have a Nikon FM and often find the light meter giving an overexposure or underexposure at 1/5 - 1 stop reading. It's difficult to make the choice, but from what you're showing it seems overexposure is maybe the better option (I'm shooting B&W).
So you're treating your process as if it's a digital camera RAW file. Interesting, not sure how I feel about it since it's wholly dependent on the nature of the scanning technology and not really about what really works best for film.
Hey Paul. Currently this is my work flow. It might now be the best or most skillful but I am sure it is very similar to most people posting online as scanning is a part of that process no mater what. Maybe one day I’ll get a dark room but not ye Lt :)
So I will now be doing some stuff with over exposing by one stop and see what I think of it for a while.

It's easier to correct an overexposure, always 😅.
Expose for the shadows and then develop for the highlights 👍🏽
