@ Ken Click , great recipe my friend, i'm 57 yr., old Irishman from rural Ky. so you had me at taters, lol, also a few tips for you, subs, viewers if anyone is interested. I could not find metal rings so made some out of tuna cans by removing bottom/top & soaking off label, also after towel squeeze, i put them in salad spinner, dries them really well( spinner easy cleanup, just wipe with hot soapy dishrag,rinse & dry, 1 minute) , also I have cooked with cast iron/enamel coated cast iron most of my life. Cast iron skillets are a poor conductor of heat, but great retainer of heat, place a dry one in a pre-heated oven on bake at 450 F for appx. 25 minutes, double oven mitt when you take it out & place on burner at medium as is screaming hot. Continue recipe as you did, add oil, taters, etc...you won't have any cool spots on the pan bottom & taters will brown great, this works for all cast iron cooking for pork chops, chix, etc...just some tips from an older hillbilly christian man to a christian brother. For folks who want quality cast iron cookware/great variety, shop online at site " The Lodge" , quality at reasonable prices, last for generations, God Bless all & stay safe.

Is ok if you do not want to say, but being from the south you don't have a southern draw to your voice like us & i don't hear any accent like new england, northern, etc...lol, anyway, God Bless you & yours

Ken, I have never made homemade Hash browns before but you made it look so easy. I’m going to try it. It looks delicious and your personality is wonderful!!!
Even easier, microwave the potato as you would for a baked potato BUT just short of done. Allow the potato to cool a bit(run under cold water) and skip the peel and dish towel. The peel will come right off when grating straight into the skillet and you can fry it to a crispy treat. Makes the potato far easier to grate also.

What you squeezed out is the potato starch. That is wonderful for baking bread. You can make a starter with it. It is also a good thickener for sauces and gravies. Your hash browns look great👍.

Ken, I don’t add all those other spices like others do. As a matter of fact, instead of salt, I use Mrs. Dash’s to eliminate the sodium, trust me, you can’t even tell you did nit add salt. They taste the same and they are crispy as well. I also, use Mrs, Dash’s on my eggs. At our age, a lot of salt is not good. Love you recipes!
