New Online Presence for USDA Home Canning

- The University of Georgia Extension has officially become the face of the USDA's National Center for Home Food Preservation and they have a new updated website. It is a wonderful resource. We go to the site and explore examples of what is found there that will be very helpful for those wanting to have easier access to tested recipes.

45 years ago, in a foreign country, way before the Internet, I needed to learn how to make soap. I wrote to the USDA. They sent all the information I needed, expedited! ...in the diplomatic pouch! My friends thought homemade soap was weird 😂

What a fantastic resource. Overseas, where there is no USDA equivalent, there are so many well-meaning, but outdated traditions around food preservation - especially in Italy where I am from, we are very susceptible to that. It's great to have a safe, and scientifically-tested way to continue those traditions and preserve what comes out of the garden.
Well Miss Rose, I have to call you out. You, young lady are no where near 80 years old. Thank you for the true science of food preservation. My family, through the generations had canned etc. The old canning and meat preservation recipes differ very slightly from today. Dr. DJG, Prof., Esq.,

Thank you for the update! I have the National Center for Home Food Preservation in my favorites on my computer and although I'm sure I would have been checking it in the coming months I hadn't looked at it since last year. Since I have offered to assist some of the younger ladies at our church in their endeavors to learn to preserve food it is an easily accessible resource to all of them. And by the way, I just need to thank you also for the introduction several months ago to the Nesco electric canner. We are an older couple and I just don't need to preserve in quantities as I used to when we had a house-full! The Nesco is perfect for pressure canning small quantities of chicken and beef in pint jars. I watch each of your videos with enthusiasm. You inspire me to do more with the time God has given me!

I wish i could share with you my early preserving books from UGA. Printed in 1976, they are just 2 pamphlets because at the time they separated canning and freezing. I still use the freezing one for blanching times but the canning one has outdated processing times. That one is still on the bookshelf for old times sake. 😂 When we lived in Athens i got those free from them. UGA extension has always been a tremendous resource. To my way of thinking they are a national treasure. Go Dawgs!

$200.00, that is crazy. UGA does not ship to Canada. Many of the new UGA tested recipes in the updated website are online and can be downloaded or printed. This includes the USDA recipes. Jim

UGA is my local “go-to” for information. They did the testing for my dial pressure gauge. Got kicked out of an online group, because I questioned oven canning of raw chicken at250(yes) for 4 hours.

Hi I purchased the So Easy to Preserve canning book in 2023. It's a good thing that everything is integrated now and I'm so glad they made the decision to do it. The book has been on the website for quite some time it just makes more since to combine the two, and I might add that it's a fantastic addition to have in my canning library. I would love for them to start testing other recipes now that there is so much interest in canning.
