I do a tomato soup casserole with ground beef. A pound of ground beef browned in a pot. I add some onions and Italian seasoning then add a couple cans tomato soup and a can of corn (without the liquid) a couple cups water. Then I cook about a cup of elbow macaroni in the tomato beef mixture until done. Add salt and pepper if needed. It’s so easy and surprisingly delicious. I got the recipe years ago from a campbells cookbook. I like it with my grandmas crispy buttery cornbread on the side.

Another winter fav at our house is called a shipwreck. Layer a casserole dish with sliced potatoes, onion, green peppers and 2 cans of ranch style beans. Press uncooked ground beef (the leaner the better) over the mixture (kinda looks like a meatloaf). Pour a medium can of tomato sauce and cook till potatoes are tender. I serve it with cornbread. Always a crowd pleaser
Meatloaf was my dad's contribution. He always formed it in a French leaf shape on a cookie sheet and covered the outside with cornmeal. It made a delicious crunchy coating

Last time I had ground beef I made Navajo fry bread, and topped it with the seasoned beef and lettuce tomatoes onions sour cream shredded cheese and whatever you'd put on a taco. It is really easy to make the fry bread and I bet it is a kid friendly meal too :)

On my meatloaf topping I went to covering it with BBQ sauce that has honey in it. We don’t just like full on ketchup but if I only have ketchup I mix with a 1/2 cup of brown sugar. It’s delicious. I don’t know when to use Teriyaki sauce, sesame oil, red wine vinegar, soy sauce, you get the picture. If you have any I would love to learn how to use those things and have a guide explained by you. Can I suggest taking the garlic, place it in a chopper to mush it up, use a small cookie scoop to make garlic pucks, freeze them flat and put them in a freezer bag. I have done it and it is so easy to add to recipes quickly.
I use ketchup, ground mustard, brown sugar and a pinch of nutmeg on top of meatloaf. My mom use to make hamberger-hotdogs brown gravy. It sounds crazy but so good over rice and low budget meat with salad or veggie. One of my favorites is sloppy joes. One I made as a kid was rolled out biscuits add your beef, cheese fold over and bake you can dip in ketchup or mustard. Your kids might like this simple dish. Fun to get know ideas. Love stuffed cabbage rolls also.
