I'll explain some things that were unclear (no spoilers)
Ainz's base has appeared on the border of three countries: The Kingdom, the Empire, and the Slane Theocracy. By chance, all these countries are fundamentally human, but there are also other more distant nations that are not human, but monsters like dragons.
In reality, despite their high numbers, the human species is one of the weakest and is constantly under siege or enslaved by the rest of the world. The nation that cares most about “ensuring the survival of humanity” is the Theocracy and to do so it resorts to means that are quite radical, since if it didn't, humanity would have fallen long ago. It is because the power of the Theocracy arouses fear in other countries that no heteromorphic nation dares to invade human nations.
Gazef Stronoff is the best warrior in the kingdom and one of the most honorable characters, but the kingdom he serves has many problems that have weakened it and the safety of the human nations is in danger because of it. The Slane Theocracy had decided to go ahead and bring about the downfall of the Kingdom themselves, before a non-human nation attacked it. So, they can create a new powerful human country or let another absorb it. The problem is that Gazef Stronoff is very strong and absolutely loyal to his king, so the Theocracy knows that they will never get him to defect from the kingdom, that's why they chose to assassinate him first. And in truth they were only able to set up a trap for him because many nobles from the corrupt kingdom conspired to kill him out of jealousy. That reveals to you the degree of corruption that the kingdom has, that they do not mind killing their best captain commander in order to gain a little more power.
In the middle of all this Ainz falls and turns everything upside down as if it were the Adams family.
The Sunlight Scripture are an Elite commando of the Slane Theocracy, but they haven't been able to do anything to Ainz and this has revealed a lot about the strength he possesses and the magic system.
The Magic of Ygdrassil game has 10 fundamental levels.
Normal people can't use magic.
The more or less gifted can use 1 or 2d Tier Magic.
Great talents can use 3th Tier Magic.
Super geniuses and gifted people can do 4 or 5th Tier Magic.
With the help of invocations or ceremonies it is possible to do magic of level 6th and 7th Tier Magic but it is believed that it is impossible for a single individual to do it. That's why Captain Nigan shouts "Dominion Authority's magic completely surpasses humanity". Since that angel's ray of light is 7th Tier Magic.
By theory, 8th Tier Magic is suspected to exist, but has never been found and is considered a myth or something exclusive to the gods.
Ainz is a level 100 player… And he can use 10th Tier Magic. Hence all the attacks slipping from him as if it was a joke. Only "Grasp Heart" with which he ripped out the heart of the first knight is 9th Tier Magic Spell.
However, Ainz is very cautious and wanted to make sure the enemies weren't stronger than him, so that's why he first chose to watch Gazef's battle and only changed at the last moment. That's why Albedo celebrates that he "used that human" as a guinea pig.
The world of Overlord is inspired by Dungeons and Dragons, so there are certain rules for all characters that have to be followed. Ainz is a lich, so he should normally be weak against blunt physical attacks. But since he is a level 100 player there are many passive effects on his body that nullify the damage of low-level attacks. Specifically, any blow below level 60 will not do anything to him, so the swords of the first angels are useless against him, since they do not exceed level 30. This massive difference in levels is also why Ainz can smash "angels" into the ground so easily.
It is also evident that Ainz cannot be the only player who has come from Ygdrassil, because someone must have taught the humans of that world how to use that kind of magic. But it is still a mystery who they are or if they still exist.
The Data Crystal used by Nigun is a Yggdrassil Item that in theory can store 9th Tier spells and that's why he thought the angel inside would be from the first hierarchy, the seraphim or cherubim, but a Dominion Authority is the middle rank between mid-ranks and so he felt bad for being on his guard.
Before starting to fight, Ainz put up an anti-spy barrier so that no one could watch them from afar with magic. That is why the sky suddenly seems to crack for an instant, because someone tried to observe from afar, but the barrier stopped him.
Finally, in the post-credits scene you can see that Ainz only wants to search for the friends of this world using his new name, but his servants have misunderstood his intentions and believe that he wants world domination.
And he has not yet realized this.

So, to explain a bit about Information Magic. YGGDRASIL was a VR MMO RPG gane that took PvP VERY seriously. The game had a lot of very diverse builds any player could go for, and pretty much all players kept information about their builds and items either to temselves or within their guild. Besides that, the game was ginourmous, with plenty of space for guilds to take over and hide in. Because of this information was an extremely important factor when Guilds fought eachother. How many members the enemy guild has, what are their builds, how do they prefer to fight, when each member goes online or offline, what is the structure of the guild base, the layout of each floor, how strong are the defences of the base, does the base have any unique features, etc.. And the game had A LOT of spells that could be used to gather information, or prevent the enemy from doing so.

Minor corrections:
Data Crystals are different from Sealing Crystals. In this scene, Nigun used a Sealing Crystal as its purpose is to seal/hold spells unlike Data Crystal which has the ability to customize items and store data that could be imbued on items.
Nigun’s Sealing Crystal was said to be able to seal up to the 10th Tier.
The Dominion rank of the angels are at the top of the second order of angels / middle echelon. It’s directly below the bottom type of angel from the first order. So it’s actually quite strong. Just not for a lvl 100.

Funny enough, Overlord is one of the few isekai series where the church isn't actually evil, even if it doesn't seem that way at first, since ironically, Gazef's death would have been a good thing for humankind as a whole.

Well... while they're not evil, they are morally bankrupt and incredibly xenophobic. They do not wish for peace with even other "humanoids", just Human supremacy. They condone the enslavement and eradication of others just because they are perceived as "lesser". Some don't even believe in the Theocracy doctrine, they just use their position to commit cruel acts without reprimand (Nigun is the prime example, as we know from later information that he has slaughtered many Demi-Humans just living in villages, and as seen here, will senselessly murder humans that are not required of his task).
Radicals are inherently problematic. Radicals that condone genocide are pretty damn evil. There's very little in Overlord that you can paint as purely good or evil. Whole lot of perspectives and contexts that can shift that scale completely. But the Theocracy is only actually "Good" from the perspective of the Theocracy.
