    Great stuff! And a great video. How does this branch compare to the original in Tokyo? Is it the same menu? Someone here mentioned $4K HKD> That's even more expensive than the original place in Tokyo.

      We never tried the original. But the ingredients are hand picked by the same head chef. Yes it is around 4K hkd per head unfortunately.

    I think the reason why you don’t show the chef’s face is because he’s not the real saito san. The way this chef makes nigiri is different than Saito san.

      Meal for the night was Hong Kong shop Head chef Ikuya Kobayashi San, Saito san spends most of time in Tokyo. Our videos try to focus on the food rather than the chef. Thank you very much for watching.

      after 6 months of invite only reservation, think they are opening up now, just need to call 2 to 3 months ahead for the HK branch.

      Because of Such these high-quality Sushi bar only prepare 10 seat table. And these things are required a lot of time for preparation for the Sushi material.

      True, high-end sushi never uses gloves. Not only it makes it difficult to make good sushi, it's not safe either. Go to cheap kaiten sushi if you prefer gloves.
