I've always wondered about this...I can understand how the optical out connection works because it can transmit the 5.1 audio signal to the surround sound system. But in your first setup don't the composite (RCA) cables only transmit the stereo signal to the surround sound system? In which case aren't you relying on your surround sound receiver to decode the stereo into an artificial version of surround sound, as is Dolby Pro Logic?
Yep exactly correct. The second way (optical) is for proper Dolby Digital surround. The first way is fine for just stereo DVD sound on a 2-channel receiver or old Pro-Logic artificial surround model.

Why wouldn't the DVD/Blue Ray Player video & audio (as well as the Cable/Satellite Box, Fire Stick, etc.) just connect to an associated receiver input, then 1 HDMI output to a television input? My only audio is from the receiver to 5.1 Surround Sound speakers. This is what I've been doing with great home theater results.

One other issue with these speakers, is they have 4 connectors black, red, gray and blue (these have a sub woofer in each speaker). I'm wondering, where in the world do the gray and blue ones plug in?? Please help!

the HT - J5250K has an External Digital Optical audio input, it would be possible to connect an brand DVD which also has an Optical output

You can plug 3 rcas red green blue directly to tv and 2 another rcas (audio cable) directly to the home theater.
Once you hooked up optical to the receiver. No need to use RCA plug from DVD to tv.
