I hope you enjoy this What I Ate Today video! Thank you for watching 😊
Spain on a Fork has a great veggie broth video. I've been making my own broth for a while . Freezing veggies that are a little older until u have enough to make a batch of broth is a great way to save money!
I bet those croutons would be spectacular in a panzenella salad! I do love that crunch factor.
I LOVE air fried croutons! I keep a baguette in my fridge almost exclusively for air-fried garlic toast, but poultry-seasoned croutons to go with my black-eyed pea soup would really hit the spot this evening. What's funny is I *never* made soup before going vegan, and now it's my go-to meal. I wonder why that is.
My dad brought me a freezer full of hand-picked blueberries this week, so I can't wait for that blueberry pie recipe! 😋 Thanks for letting us hang out with you today :-)
As always loved your video. I’m suffering from inflammation (osteoarthritis) and a vegan video of what to eat would be great.
As a vegan scientist suffering from Hashimoto's, I can recommend doing your own research. A lot of the time, people on the internet (not meaning to call anybody out here) misinterpret data unwillingly.
Hey Alex ❤️ Here's a playlist with over 100 of my What I Eat in a Day videos! Hope it gives you some good meal ideas 😊 Hope you're doing well and have a happy Sunday! Sending you love ☀️

Hiya lovely.
You know I think you're amazing. I love how informative you are and also that what you share in your vlogs isn't just about yourself, its about thinking of others and what we would like. That is special, you are special and you make us feel special. Xxxx
Yum and what a fun day, I love hiking and just having a chill laid back shopping day...it is a good time to join thrive though with gas prices so high. It's so annoying to have to go to 3 or 4 grocery stores. Happy Sunday Nicole!
Agreed! Going to a bunch of different places just isn't practical so this is way easier! Thanks for watching and taking the time to comment 😊 Hope you're having a good Sunday!
I always enjoy you videos Nikki, you have such a soothing voice.
The view from your walk was amazing, and it was a beautiful day. A lesson learned about sun lotion 🧴, in summer always put some on, before you leave home. ❣️
I've seen you rave about those lentil dill and sour cream chips in 2 videos now. I was so excited because I added them into my grocery order and was so eager and ready to try them. And out of 26 items ordered, those chips were the thing that was out of stock. I was so sad. So I think I am going to join Thrive Market after all even if it is with the purpose of trying those chips.
What a beautiful day & making your own croutons is a great idea. They looked good. I do like shopping but not when stores are really busy. I rather just ordered online then.
Thanks Mel! Glad you liked that idea 😊 and I agree, I like both but starting online is a nice way to avoid the crowds
I'm looking forward to the blueberry pie recipe!!
I was excited to try the apple with tahini and date syrup. And I was even more excited that I already had the ingredients on hand. Wow! They are scrumptious and I plan to eat them often. Thanks for sharing, Nikki.
I really like you videos and your honest and down-to-earth personality 💖
Now I’m craving soup. Those lentil chips sound really good!
Love It, Thank you for the creative food ideas and priceless self care reminders🥰 Being in touch and tune with Nature makes my heart smile, that view was beautiful & the motivational quotes on the fence💜
Loveee tahini with coconut nectar! I love date syrup too, but coconut nectar mixed in and then in the fridge a bit..so good with apples and cucumbers :)
After your last video with the chips I ordered them from thrive, they are now on my monthly subscription shipment.
Love the idea of dessert meal prep!
I always loved hiking in Runyon Canyon when I could find parking!
Haha I know, parking in LA is a whole thing 😅😅😂😂
Love making croutons but never thought to do them in the air fryer! My kids end up eating them all before they ever make it to the soup or salad🤪 thanks for another great video.. Always find them so uplifting and inspiring! Great way to start my day❤️
Aw thanks Meghann, I'm so happy to hear that 😊 and lol I'm the same way! I eat them straight out of the air fryer lol Hope you and your family enjoy!
Another awesome video as always Nicole 👏 No bake & no cook recipes are a great idea because cooking increases energy costs during these uncertain times when everything seems to be going up. Love 🥰 the video and love 💕Nicole.
Thank you David! I'm glad to know that no cook recipes would be helpful! I love simple, no-cook meals this time of year so that sounds great 😊😊 Hope you have a great Sunday!
Another amazing video! You have such a gift with describing food that I actually want to be there sharing a meal with you. Thank you for including us in your outings and day-to-day life! ☺️
Aw thank you so much! 🥰🥰 I’m so glad you like that and that you enjoyed this video! Thanks for letting me know ❤️ Happy Sunday!
@@NikkiVegan 🥰
Great video as always, Nikki! The croutons look amazing and that soup! All of the food looked so good :)
Aw thank you!I love this soup + croutons combo! The other day I made a garlic herb version and it was so good! Hope you enjoy if you make it at home 😊😊
You have the absolute best vlogs! I love these Sunday videos so much. And I am way too excited about the butter video!! 🥰
You have so much sunshine in California! That looked like a really nice hike. I need to get outside today. I have to get my hands on those dill & sour cream lentil chips, they sounds so tasty!
Love you Nikki! Keep it up!
@nikkivegan I have to try those chips. I love a good hike as well. So fun seeing your day in a life videos. Have a great week!
Thanks! Yum! Can’t wait to try the lemon dill dressing and croutons! ☺️
Thank Shelli! I'm so happy to hear you're excited about those recipes! I put that dressing on everything and the croutons are so fun to make! Recently made a batch with garlic and herbs and it was delish 👌 Hope you enjoy! 😊😊
Great video as always 💕
Great idea to measure the food in the serving bowl you will be using! Thanks for sharing!
Glad you liked that tip! It helps me not waste food so I thought I’d share 😊❤️
Try calendula cream on your sunburn. Looking forward to making the croutons. Thanks for the recipe.
Good to know, thank you! And yay! I hope you enjoy ❤️❤️ love them in soup and on salad 🤗
Great video! I just found your channel, and it was packed with great ideas. I’m now craving that beautiful sushi!
Hey Cristina! I'm so glad you found my channel 😊😊 Hope you enjoy and I have videos on how to make vegan sushi if the craving gets too intense! lol (happens to me all the time 😂) ruclips.net/video/qakQegvvRDM/видео.html Happy Sunday ☀️
My mom was like that with a paring knife. She could cut the peel all the way around the apple without breaking it and it would end up being this foot long curl 😂. I can’t do it like her, but I always try. On another note, I know you’re younger than me and you eat better than I do, and you probably hydrate more often than I do (lol), but could you possibly do a skin care routine video? Your skin is absolutely glowing. 😍. Just gorgeous 💕
Aw that's so cool! I've always wanted to do that with an apple too but I've never managed to it all in one piece. Hence the cheese knife lol And thank you! My skin care routine is really simple, I wash one or twice a day, followed by hyaluronic acid acid serum (because its soooo dry in california) and moisturizer on top. Then face sunscreen if it's daytime and for makeup I've been skipping foundation because I using concealer under my eyes, around my nose and to cover any red spots. Hope that helps! ❤️
@@NikkiVegan thank you! 😊💕
My friend gave me one of those cheese peelers (she’s Norwegian) and she told me they were invented there!! 😊The Enjoy Life lentil chips are ✨everything✨ And YESS to the baked goods, so true, your pie looked so good!! 🥧 🫐
Ah that makes sense! We always had a few of these in the house growing up especially because we had a lot of what translates to "brown cheese" in English which was a block of firm brown goat cheese that we would peel with one of these peelers. Pretty sure I was the only one who was also using them to peel potatoes though 😂 And yesss! Aren't those chips so good? I'm glad you like them too! ❤️
I tried those chips from Thrive on your recommendation and I’m obsessed. So good!
Ah! Im so happy to hear that you liked them! That’s awesome 😊 thanks for letting me know!
That sushi is so pretty!
Right?? I was so drawn to those colors 😍
Beautiful video. Thanks.
What a fun video! I love Thrive Market, well worth the money
Aw thanks Maria and agreed! I love it too. It's how I find so many fun new vegan products 😊
Great video! Plus... I just signed up for Nikki's List!
💚
❤️❤️
I hope your sunburns aren't too bad. Using zincoxide cream or aloevera (or both) do wonders for burns. You should give it a try.
Aw thank you so much! I was thinking I should get some aloe for my back and shoulders! It's getting better but oof, definitely not fun! Thanks for the suggestions ❤️
Love the video as always!! I am looking for an air fryer. Can you tell me what brand you have and if you like it? It looks like you have had it for sometime as evidence from your other videos. Do you recommend it? Thank you.
Love your videos!!
Aw thank you! Im so glad you like my videos 🥰🥰🥰 thanks for letting me know!
I’m excited to try the Tahini brand you recommended! I’ve never had tahini so this will be fun, thanks!😊
Soom is so good!! I hope you enjoy it! Note: because it's a little thinner, you might want to use slightly less liquid when making tahini dressings and add more gradually as needed 👩🏻🍳 If you've never had tahini before you've gotta try this Maple Miso Tahini sauce nikkivegan.com/healthy-air-fried-pears-with-maple-tahini-sauce/ One of my all time favorite combos! 😊
Lmao girl as soon as I saw you hiking with that pretty backless top on I was like "I hope she's wearing sunscreen!!" 😅🌞 The pie looked delish!
You had me at dessert! 💜
haha right? me too 😊
Hi! I am a vegetarian and love tahini but all the ones I try are bitter. Any suggestions
What Air Fryer do you recommend?
Great video! I can’t see what the brand of that tahini is. I’m always looking for one that’s more runny. The ones I get always end up thick like peanut butter.
My favorite one is called Soom! It’s so thin and runny! Absolutely love it 🤗 Hope you enjoy!
The Whole Foods 365 tahini is super runny!
Thank you!
I just love a hot bubble bath....The croutons and soup look divine Nikki..
Me too! Instantly relaxing! And thank you, it was such a cozy meal. Made it several times last week! lol Hope you're having a nice Sunday 😊😊
I’ve tried to sign up for thrive as a veteran ( they don’t charge a sign on or monthly fee ) but been having trouble
Hi Nikki ! Do like the thrive mayo? I liked Best Foods and the closest I’ve tried is Just mayo but I can never 👎🏾 find it anymore!
I liked that one too! I didn’t know they discontinued it ☹️ But good question! I haven’t tried it yet because I still have an open jar but I’ll let you know!
I think I've seen those enjoy life lentil chips at Whole Foods and possibly Meijer.
Ooo good to know! My current favorite for sure 😊😊
@@NikkiVegan of course, I'll have to try them some time. ☺️☺️ Thank you.
Erewhon Market is so overhyped and expensive 😳 it is crazy, these rainbow gimbap are easily made at home the way you want (also prep)
Watching this while eating a toaster pastry 😕
Veganism is rising and thriving while carnism is trying and dying! Keep fighting vegan warriors! CHARGE!!!!
I love your videos. I ordered from thrive market and loved the food and household items I bought. BUT…it came in so much wrapping and boxes that I cancelled my subscription. I didn’t consider the fact that ordering online will make extra trash from the shipping process. I try to use less paper, plastic, etc as to not contribute to the world trash problem. Even if these things are recycled a lot of recycling doesn’t get recycled. I’m so bummed and I can’t think of any way around the shipping trash.
I hear that! What gives me peace of mind is knowing that the materials are recycled and compostable and they come from a factory that is certified zero waste so the impact is actually way less than the materials used to ship to grocery stores. There’s a lot of packaging involved there too but we don’t see it as much because they unwrap everything before it goes on display. For me it’s nice to know that the more convenient option is also the one that comes from a company that is actively trying to improve the environment. That’s so rare these days! Hope that helps ❤️ And I hope you’re having a good day! Happy Sunday ☀️
