Thorough test! My pellet grill only has one rack and using the 0-400 method, they looked good at the flip but then proceeded to dry out and burn. Tried another batch the next day and checked on them 10 minutes after the flip and they were perfect.
Do you have any experience adding a little cornstarch before the air fryer or a convection oven? I have heard that helps crisp them up but I have yet to try it.
The problem with pellet smokers is they actually cycle above and below the target temperature, much like a regular oven. Some even vary as much as 15 degrees hotter and colder. You’ll actually be spending a fair amount of time cooking hotter than your goal temperature, so set it a bit lower to 390, and use a thermometer probe to monitor the oven temp. A great trade off: Try 30 minutes on the bottom rack, then 30 on the top rack.
Pro Tip: I disagree, The 0-400 produces a wonderful wing, smokey, juicy, tender and not rubbery at all. But to be fair nothing really beats deep fried, wings, fries, shrimp, fish are all better deep fried. But it is also a lot more work and mess from beginning to end straining the oil and refrigerating it for the next fry. All things considered 0-400 is the way to go as it is an excellent trade off all said and done!

I thought you were supposed to leave the lid open on the smoker through the ignition process. This is the 2nd video I’ve seen where the lid has been left closed.
I dont need to do it to know this wouldnt work on my yoder smoker. If I set it to 400 its going to launch way past 400 and than settle on 400 after about 20-30 minutes. Wings will be black in 10-15 minutes.
My Pit Boss produces all kinds of unhealthy smoke on startup. They do not recommend placing food on the grates until the startup is finished. So 0-400 is a no-go on a Pit Boss.
There was no twist. The only difference was cooking on the top vs bottom rack. The air fryer and deep fry methods were completely unrelated techniques.
Great video! But how do people even come up with these stupid ways to cook? Blows my mind. Cooking isn't an exact science. There is no one way to do things. If you want to follow a recipe, then become a baker. Even then, there are so many factors that can affect your results. Just become a better cook with trial and error.
This was a terrible cook i don't have those other things it's too make dinner easier not smoking and deep frying.....not sure why you did this i don't trust your opinion anymore so I am removing your vedio
So which is it 1 or 2 hrs low smoke then fry for 10 minutes? Earlier in the video you said 1 hr low temp smoke then at the end you said 2 hours.

You are absolutely correct "can't beat fried wings."
I have done the 0-400° method and toss them in Buffalo sauce. So the little bit of char is good. Now I will try your method to see. Thanks Steve!

The thing I'm curious about with the 0-400 is that you're supposed to start most pellet grills with the lid open to avoid your grill going boom.

375 for 35 flip halfway. I keep the wings whole bc less cuts means the juices stay inside. Come out awesome!
