- In today's video, we'll head out to the snow covered garden, and harvest some fresh spinach. Yes, it's still there, and still looking good. There's some the got a little "burnt" by the snow, but we'll just leave that be. We'll take it inside, get it washed and chopped. And wilt some up with some fresh onions and garlic and make our own version of spinach pie. We love this dish in restaurants - and have taken all the various flavors and put them together in one. We'll even cheat, and use store-bought dough for the pie. So come along with us, together in the kitchen, as we make dinner for ourselves.

Here’s an idea. Buy some lambs. Enjoy them, etc., then hire a neighbor to take them to the processor. Then pretend you’re just picking them up at the grocery store. I enjoy you guys so much, and check your channel every day. God bless and keep you both!
(todd here) - did a little research. for most lambs that go to market, they weigh between 90 and 140 pounds. that's pretty hefty, and beyond probably what I would consider the "cute" stage. i'm also surprised at how much meat you actually can get. it's not very much, considering. here's a quote I found:
"Lambs generally have about a 50% yield for the carcass weight and then about a 75% yield of meat from that carcass or about 34 pounds of meat from a whole 90 pound lamb."

They own and operate a homestead. Raising and butchering your meat is a part of that lifestyle. If you don't agree with it, why in the world are you watching it? Get off and go watch something you can agree with!

Okay, Rachel....you are as fun and sweet as can be...but when you asked for us to say who should get their way with lambs or a cow....I thought I gotta vote with Todd for the lambs....any man that cooks and ACTUALLY TALKS TO YOU that much...is a real FIND!!! If you want lamb - watch Sandi Brock - it is amazing how fast those cuties grow up and how little they look like little lambs in just a few months.
Agree...Love "Sandy Brock Sheepisly Me" ... her lambs are ready for market between 4 an 5 months old, weighing about 100 lbs
My friend Rachel (yes, her name was Rachel, too!) lived on a dairy farm, and I envied her sooo much because her Mom packed her hot dog and Miracle Whip sandwiches on white fluffy bread in her lunchbox for school! I got PB &J on whole wheat bread or cracked wheat, because my dad liked darker bread. I used to trade half my sandwich for half of hers, and we each got the best of both worlds, ha ha!
I read most of Laura Ingalls Wilder when I was a child. About 6th grade I guess. I spent the winter taking long baths and reading in the evenings. Watched the series too. I could relate to my grandparents farms and their way of life. After living across the U.S. in bustling cities, I now own one of those family farms!

You can do this! Lambs, pigs, all of it. Just remember, the same as your pigs, you give them the best life while they are with you - then they fulfill their purpose.
Being 100% Greek, came here as a little girl LEGALLY, all I kept thinking was... "where is the feta cheese and dill"? LOL Of course my brain went to spanakopita! Your version looks delish I have to be honest with you!! ❤ As for the cow or lambs? LIVE BIG OR GO HOME!! Get both I say! Love you both, GOD BLESS! I agree with the barn suggestion. We had cows and I was so sad to see them with horseflies all over them. If I had a barn I could have kept them out of the area with the flies. I felt so bad about it that we got rid of the cows. I was also concerned about the ice storms we have here. I'd feel just terrible if I could somehow protect them from the ice. Oh well... maybe next time around we'll build a barn. For now I'm sticking with my chickens and ducks. They are so easy to raise and butcher. There's nothin like farm fresh eggs and home raised roasted chicken! Lovin it! Have fun with the Little House series. We live a few miles from Laura's Missouri farm house. If you haven't been it's a treat to see. The house was made into a museum some time in 1957 and it remains in the condition she left it in when she died. Each year they have Wilder Days and Pa's fiddle is played. It's a great little vacation for Laura fans of all ages. After you go there, head down to Branson, and watch a show or two. You won't regret your little vacation. So much fun.
Every day my wife makes something with a pile of greens big enough to bear hug. Love it!

Two things: there's no such thing as too much parmesan and everything but the bagel seasoning is the best thing on everything! Loved watching!
My mom and I made fresh pepper and mayo sandwiches or fresh tomato and mayo sandwiches I lost her 3 years ago new years day and I still eat them and I also make lettuce and mayo sandwiches too
What a great video. The spinach pie looks delicious but what really got me was Little House on the Prairie. I grew up in the 70's so this was a favorite. My mom lives with me now and about a year and half ago we started re-watching the series. I love it as much as an adult as I did as child/young adult. I hope you are enjoying it.
I have only been watching your channel for a little over a month and every time I hear your oven beep or your timer beep I start to get up to see what I forgot on the stove or in the oven or forgot to put in the oven. We have the exact same range as you! When my son hears yours on the TV, he comes out of his room to ask what am I cooking and is disappointed that it isn't our range. He is a preteen and it isn't too often he comes out of his room, so I will offer to make him something, whatever he wants that I dont have to run to the store for any of the ingredients on the spot.
I came from a large family, 8 kids, and when mom made beans and hot dogs for supper she always cooked xtra so we would have hot dog sandwiches to take to school for lunch the next day. But we had mustard on ours :-) Also I just wanted to mention that I make my spinach pie with feta cheese. Sometimes in a filo crust and sometimes no crust at all...yummy. I hadn't thought about those hot dog sammies in years. A fun video!
I have an incredible recipe for spinach pie that may be more traditional. It have spinach, green onions, 7 eggs, and 1 pound of feta cheese (my favorite cheese). I would put it in a 9x13 pan with half a box of fill dough on the bottom with light olive oil in between layers, then spinach, cheese,onion, and egg mixture, and then the other half a box of file dough (spread with olive oil) 13 sheets each and then bake. It puffed up so awesome and I would freeze some for later!! I'm a fellow Michigander and love watching you both and your beautiful farm!! Blessings to you both!

Lamb is by far our favorite meat! We have lamb at least 2 times weekly!! We were just talking about raising our own!!
Lamb is totally, hands down our favorite protein. Amazing tallow. Yum.
Coming from an Italian family, all we added to the spinach was olive oil, pepperoni and cheese...lol! Yummy
My Grandmother always made spinach pies for Christmas. No one got the recipe, but my cousin that lived with her growing up thinks she knows how she made them. The funny thing is we do know she used Winn Dixie canned biscuits for the dough. She also added sliced black olives and made them into individual pies.

Yum, I adore spinach pie! I vote for raising lambs. They are cute but they are even more delicious!! (Coming from a long time knitter and yarn spinner, who eats lamb at all the fiber festivals I go to!)

My kids raised lambs for the 4H fair. It is very hard I will say to raise them and then process them. Lambs are playful and adorable so it’s so easy to get attached. :( So you can always get a 4H lamb from the fair. :) But they are really easy to raise otherwise.

Draining the ricotta, will help with the amount of liquid. Definitely less eggs and if you add fresh nutmeg and some Feta It will totally lift the filling. Also great made with Fillo pastry
I just made this tonight and my husband and I loved it. I decided to write and say that I made it and when I looked at the comments I gasped when I came to yours. This was exactly what I did tonight before I read your comment. The feta, the nutmeg and 1 less egg. It turned out great. I definitely will make it again. I loved the ricotta. Awww you ARE a big softie....coming from New Zealand, sheep are a HUGE part of our agriculture, I know Lamb is yummy but actually I think hogget/mutton is very under-utilised in cooking. For roasts and casseroles mutton outweighs beef in flavour intensity and yumminess!!!! so go ahead and grow your sheep - you could get one lamb and one calf and they can keep each other company until D Day :) xxxxx

Rachel I totally understand about the cow. I've been watching video on the Dexter cow. So awesome! A mini cow that is well marbled with bring grass fed. They only need an acre of field per cow. Good luck on getting a cow.

I made this for company tonight using Swiss chard from the garden. Wow, what a hit it was! And sorry Todd, but Rachel is right... I added a 1/2tsp of allspice... perfection level-up! Lol!
